Caramel Sauce from Butter, Love, and Cowboys

Last weekend, we made the trek up to Montana for Easter. My mom made Pioneer Woman’s Caramel Apple Pie for Easter dessert. Now let me tell you, I am NOT a pie fan. Call me crazy but I do not believe pie crust belongs in any dessert. Pie crust is wonderful with chicken pot pie or other dinner food, but I detest it with anything sweet. That pie though. I still swoon when I think about it. The best part, aside from the buttery crumb topping, was definitely the caramel sauce. It left such an impression on me, I just HAD to whip up a double batch this weekend.

This Caramel Sauce has been making me so happy that I have been thinking of ways to put it on almost every treat I have been consuming. A drizzle here, a drizzle there. Who am I kidding? I don’t just drizzle, I drench. Honestly though, I think my favorite way to eat it is warmed up and straight from the jar. Last night I finally had a bite of ice cream with a spoonful of caramel sauce. It was fantastic as well. Thank you Pioneer Woman. Thank you.

Caramel Sauce from Butter, Love, and Cowboys

This recipe is super easy too. When it comes to dessert sauces, I typically prefer they are a thick-ish consistency. The original recipe was more runny so I boiled it in an attempt to reach my desired consistency. It worked great- not so think you have to slab it on, but thick enough it sticks and oozes all over whatever dessert you choose to put it on.

A buttery and flavorful Caramel Sauce. It will be your new go-to dessert topping!

Ingredients
  1. 2 cups brown sugar
  2. 1/2 cup salted butter
  3. 1 cup cream
  4. 2 teaspoons vanilla
Instructions
  1. Place all ingredients in a medium sized saucepan. Melt together over medium-low heat. Whisk to combine well. Bring to a rapid boil. Boil 5-7 minutes. Once it cools off a few minutes, if it still is not as thick as you would like, boil 2-3 minutes longer or until desired consistency is reached. Store in the refrigerator. Serve warm over ice cream or any other sweet thing you would like!

Monster Cookie Dough Dip

Guys- this dip. I love it! Monster Cookie Dough Dip is a fantastic combination of chocolate and peanut butter. Plus we are cookie dough lovers around here. For some reason any cookie dough containing oats is particularly addicting to My Cowboy and myself. There are a lot of dessert dip recipes out there that are super delicious, but this is the favorite of the ones I have tried.

The first time I made this was Halloween night. I traded the M&M’s for Reese’s Pieces to give it more of a fall/Halloween twist. Any recipe with the word “Monster” in it is totally Halloween worthy right?

Now the Oreos. Oreos are our favorite thing to lather with Monster Cookie Dough Dip, but graham crackers are tasty as well.  Even fruits, like apples and bananas would be great to dip with. Someday I may even try eating it with homemade cookies!

Ingredients
  1. 8 oz cream cheese
  2. 1/2 cup butter, softened
  3. 2 cups powdered sugar
  4. 3 tablespoons brown sugar
  5. 1 cup peanut butter
  6. 1/4 cup flour
  7. 1 teaspoon vanilla
  8. 1 1/2 cup old fashioned oats
  9. 2/3 cup M&M's OR Reese's Pieces
  10. 1 cup milk chocolate chips
  11. 1/4 cup peanut butter chips
Instructions
  1. Beat the cream cheese until smooth and soft. Add the peanut butter and butter. Beat until creamy. Add vanilla and mix. Add powdered sugar, brown sugar, and flour. Mix well. Mix in oats. Fold in the M&M's or Reese's Pieces, chocolate chips, and peanut butter chips. Serve with Oreo's, graham crackers, pretzels, fruit, or cookies. Keep refrigerated.
