Oatmeal Peanut Butter Triple Chip Cookies-say that five times fast! The name may be a bit of a mouthful, but the combination of flavors these cookies will bring to your mouth will make you sing! These are literally one of MY FAVORITE COOKIES OF ALL TIME. As aforementioned, there are so many flavors that combine in this soft cookie. 

Over the last several years, I have become a bit obsessed with white chocolate and peanut butter together. Of course, regular chocolate and peanut butter are one of the best flavor combinations, but add a little white chocolate and the flavor tips the charts.

Oatmeal Peanut Butter Triple Chip Cookies are basically my take on monster cookies. I like monster cookies, but personally, I think these are even better! And as I promise with all my cookie recipes here on Butter, Love, and Cowboys, the recipe creates a soft, round, buttery cookie.

Oatmeal Peanut Butter Triple Chip Cookies
Yields 30
A cookie full of peanut butter and oats. The additions of milk chocolate, white chocolate, and peanut butter chips combine to make one flavorful, fully loaded cookie!

Ingredients
  1. 1 cup butter, soft, NO SUBSTITUTIONS
  2. 1 cup peanut butter
  3. 1 cup sugar
  4. 1 cup brown sugar
  5. 2 teaspoons vanilla
  6. 2 eggs
  7. 2 cups old fashioned oats
  8. *2 1/2-3 cups flour
  9. 1 teaspoon baking soda
  10. 1/4 teaspoon salt
  11. 1 1/2 cup milk chocolate chips
  12. 1 cup white chocolate chips
  13. 1/2 cup peanut butter chips
Instructions
  1. Preheat oven @ 325 degrees F. Cream butter, peanut butter, and sugars until light and fluffy, about 2 minutes. Add vanilla and continue to cream about 1 more minute. Add eggs and combine. In a separate bowl, combine oats, 2 1/2 cups of flour, baking soda, and salt. Gradually add to wet ingredients.
  2. *Be super careful with adding the flour. It is easy to add too much. It usually takes me a little more than 2 1/2, but less than 3 cups. So once I add the 2 1/2 cups, I let it mix, then if more is needed, I add it about 2 TBS at a time, until the dough no longer sticks to your fingers, but is still dough that sticks together. If you add too much flour, the dough will get crumbly.
  3. Mix in milk chocolate chips, white chocolate chips, and peanut butter chips. Roll into 1 1/2 inch balls and place on a greased cookie sheet. Bake 12-15 minutes.

I love seven layer bars. One of my first posts on this blog, was these Seven Layer Bars. They are always a yummy, versatile treat that you can really make any way you want. While I love the regular seven layer bars, I also enjoy experimenting with different kinds. As always, chocolate and peanut butter are my most favorite flavor combination, therefore I found it fitting to put them into a seven layer bar. Chocolate Peanut Butter 7 Layer Bars were created from these notions.

Chocolate Peanut Butter 7 Layer Bars are like a marriage of chocolate and peanut butter. The two flavors become one as they melt and mold together in the oven, creating a delicious bar. One of my favorite things about various versions of 7 layer bars or magic bars, whatever you like to call them, since they are basically the same thing, are their ooey-gooeyness. I love ooey-gooey.

Serves 16

Ingredients
  1. 1 package (14.3 oz) Oreo's (regular or peanut butter)
  2. 1/2 cup butter, melted
  3. 1 cup milk chocolate chips
  4. 1 cup peanut butter chips
  5. 8 full size Reese's, chopped
  6. *1 cup peanuts (Optional)
  7. 1 14 oz can sweetened condensed milk
  8. 3/4 cup peanut butter
  9. 1/4 cup cocoa powder
Instructions
  1. Preheat oven at 350 degrees F. Finely process the Oreo cookies. Mix the cookie crumbs in a medium size bowl with the melted butter until well combined. Press into a greased 9x13 inch pan to form the crust.
  2. Layer the milk chocolate chips, peanut butter chips, Reese's, followed by the peanuts (if using) over the crust.
  3. In a small microwaveable bowl, microwave the peanut butter until melted, this should take around 60 seconds. Add half of the can of sweetened condensed milk to the melted peanut butter and mix until smooth. No need to measure out the sweetened condensed milk into exact halves, just eyeball it. Place the remaining sweetened condensed milk in a small bowl and mix with the cocoa powder until smooth.
  4. Pour the peanut butter/sweetened condensed milk mixture over top of the bars, followed by the cocoa/sweetened condensed milk mixture. Bake about 25-28 minutes. Let cool at least fifteen minutes before cutting.
Notes
  1. *I don't like nuts in my bars, but if you do, I'm sure you would love them added to these bars! Technically, they aren't seven layer bars without the nuts :). I used some toffee bits instead of nuts, but I would prefer them without toffee...or nuts :).

Thick Fudge Brownies

Thick Fudge brownies are a delectable chocolate treat. They consist of an extremely fudge-y, thick, moist brownie bottom and are topped with the most amazing chocolate frosting.

First off, let me tell you these brownies are hard to get good pictures of. They are so hard to cut out of the pan because of their fudge-y moistness. Getting decent looking brownies to photograph was quite the ordeal. Let me also assure you, my pictures do not do these lovelies justice. Now, back to the story…

Once upon a time, about five years ago, I stumbled upon Thick Fudge Brownies while searching Mandy’s Recipe Box. I have never had a Mandy’s Recipe Box recipe fail me and I just knew Thick Fudge Brownies would be no exception. We absolutely loved them and that love has not died one bit in all those years. Even though I have made them many, many times since!

In Mandy’s original post, she writes about the chocolate frosting and how good it is. It is seriously some of the most amazing chocolate frosting I have ever tasted. My Cowboy says the frosting reminds him of hot fudge. Whenever I take Thick Fudge Brownies anywhere, he tells people to warm up their brownie just a few seconds in the microwave to melt the frosting just a little so it is like a brownie dripping with hot fudge!

Not only is the frosting something to rave about, but the brownie is too. Thick Fudge Brownies have forever ruined me of a plain old brownie with chocolate frosting. These are just so much better! I have what I like to think a pretty rockin’ brownie recipe for a plain cut, simple chocolate brownie, which I have shared with you before. You can find it here. It is moist, chocolate-y, and delicious, but if I am craving a brownie with chocolate frosting, this is what we go for every time.

And guess what else? This brownie recipe is as simple as it gets. It starts out with two brownie mixes, but you would never know because they do NOT taste like brownie mix brownies. Not even close. Oh I just love them!

Thick Fudge Brownies

An extremely fudge-y, moist, and rich chocolate brownie topped with the most amazing chocolate frosting.

Serves: 16-20

 

For the Brownies:

-2 box brownie mixes (Betty Crocker are my favorite)

-1 teaspoon vanilla

-4 eggs

-1/2 cup buttermilk

-3/4 cup butter, melted

-1 cup milk chocolate chips (optional)

 

For the Frosting:

-3/4 cup butter

-1/2 cup milk

-1/2 cup cocoa powder

-5 1/2 cups powdered sugar

-1 teaspoon vanilla

Preheat oven at 325 degrees F. In a large bowl, combine brownie mixes, vanilla, eggs, buttermilk, and melted butter. Stir until combined. Place in a greased 9×13 pan and bake 45-55 minutes. Let cool. To prepare the frosting, melt butter in a medium-large saucepan on medium-low heat. Once butter is melted, whisk in milk and cocoa. Stir lightly until mixture just starts to boil. Remove from heat and gradually whisk in powdered sugar, stirring well between each addition. Pour over cooled brownies and spread immediately or frosting will harden. Let frosting cool and serve!

Double Chocolate Peanut Butter Chip Cookies are a heavenly chocolate based cookie filled with loads of peanut butter chips. Their goodness doesn’t stop there. The peanut butter chips are paired with their perfect compliment, milk chocolate. 

Happy New Year! This is my first official post of 2019 (I totally typed 2018, but quickly corrected it). January has brought snow and ice to our neck of the woods and I love it! What else would we want January to be filled with? Sunday was literally the perfect winter day. Well, almost perfect. My Cowboy had to leave after church to catch his flight for a work trip so I was a little lonely :(. Besides him being gone, however, it was perfect. Let me tell you why.

We had a rockin’ snow storm that settled in the night before and continued a good chunk of the day. I find Sunday is my preferred day for a good snowstorm, because after attending church we generally spend the rest of the day at home and often have nowhere we need to go or be. Thanks to the weekly blessing of a day of rest, we don’t generally have to worry about travelling on bad roads on Sunday. It’s the best day to cozy up with a cup of hot chocolate and some cookies! And Chocolate Peanut Butter Chip Cookies will warm you right up. 

Hot cookies are one of my favorite desserts for chilly weather. They are quick and easy, and if you use the right cookie recipe, very satisfying. Chocolate Peanut Butter Chip Cookies do just that, they satisfy. Once again, I am pulling a cookie recipe from my sister, Jessie’s arsenal. She is the cookie queen of the world. Double Chocolate Peanut Butter Chip Cookies

Chocolate Peanut Butter Chip Cookies are a chocolate based cookie, loaded with peanut butter chips, and perfectly complimented with milk chocolate.

1 1/2 cups butter, softened

1 cup brown sugar

1 cup sugar

2 tsp vanilla

2 eggs

3/4 cup unsweetened cocoa powder

3- 3 1/2 cups flour

1 tsp baking soda

1/4 tsp. salt.

2 cups peanut butter chips

1-2 cups milk chocolate chips

  1. Preheat oven at 325 degrees F. Cream the butter and sugars until light and fluffy, about 2-3 minutes. Add vanilla and beat about one more minute. Add eggs and mix well.
  2. In a separate bowl, combine cocoa powder, flour, baking soda, and salt. Start with 3 cups of flour in the mixture, you can later add more flour as needed. Add half of the flour mixture to the butter/sugar mixture and combine. Add the second half of the flour mixture and mix well. If needed, add more flour, until the dough is no longer sticky. It shouldn’t take anymore than an extra 1/2 cup.
  3. Finally, add the peanut butter and chocolate chips. Combine well. Roll the dough into 1 1/2-2 inch balls (I prefer bigger cookies). Place on a greased cookie sheet and bake 10-15 minutes or until they are about cooked through.
  4. Remove cookies from the oven and let them cool on the cookie sheet for five minutes. This will allow the cookies not only to cool off, but to continue baking a little bit more. Store cookies in an airtight container. I like to place them in a container while they are still a little warm, because that extra moisture helps them remain soft through the days. If you are worried about cookies hardening, sticking a slice of bread in with the cookies will help them stay soft as well. Enjoy!

One of the best confectionery parts of the Christmas season is homemade candy. Making it, giving it, and receiving it, I love it all! Each December I only wish there were more time to test out recipes, but I try out as many as I can with the time I am allotted.

Oreo Crack Squares were one of the treats I was able to test out this year. They just may be a new favorite! You can never go wrong with chocolate and peanut butter, but add white chocolate and Oreo’s to the mix and you have yourself candy perfection.

Christmas is well on it’s way! Every December, I find myself wondering where the month has gone. I am definitely thinking the same thing today. Time is something that can be difficult to find this time of year. There is always a Christmas party, shopping, family gathering or other commitments that tend to load up the month. 

I love all of these festivities special to this time of year, but also believe we can easily spread ourselves so thin we forget to enjoy the season and reflect on it’s true significance and meaning. With that in mind, as I search for recipe ideas, I usually revert to the ones that are simple and take the least amount of time. Oreo Crack Squares are just that. They are easy as can be and ready in a time crunch.

Ingredients
  1. 2 cups milk chocolate chips
  2. 1 cup dark chocolate chips
  3. 2 cups white chocolate chips
  4. 1 cup peanut butter
  5. 24 Oreo's, coarsely chunked
Instructions
  1. 1. Line a 9x13 inch pan with parchment paper. Place milk chocolate chips, dark chocolate chips, white chocolate chips, and peanut butter in a large microwave safe bowl. Microwave in increments of 60 seconds on a power level of 50-60% until fully melted. Stir in between each increment.
  2. 2. Coarsely crush the Oreo's. Place them in a gallon Ziploc bag and crush them with a rolling pin. Do not crush too much, the larger chunks add a lot of texture to the squares. Reserve about 1/3 cup of crushed Oreo's for the topping, particularly the finer bits.
  3. 3. Stir Oreo chunks into the chocolate/peanut butter mixture. Pour into the parchment lined pan and refrigerate until firm. To hasten this process, place in the freezer for about thirty minutes. Cut into small squares. Enjoy!

Chocolate Scarecrow Bars

Chocolate Scarecrow Bars are a crunchy treat loaded with the combined flavors of chocolate and peanut butter. These are definitely part of the “just treats, no tricks” category. In my adapted recipe, this original Halloween dessert gets the most delectable makeover I could think of- a chocolate one.

So I saw several recipes for Scarecrow Bars a year or two ago and set my heart on making them and sharing, if appropriate. By the way, “sharing, if appropriate,” is when My Cowboy and I both agree that a recipe is worth sending out on the worldwide web, because we each found it delicious! As I reread this recipe, I realized two things.

  1. Scarecrow Bars begin with a yellow cake mix. (And I immediately thought, “Isn’t there a way we can improve that?”)
  2. Scarecrow Bars crunchy rice crispy topping includes a decent amount of peanut butter, which I naturally translated to a more generous amount of peanut butter. (My mind raced to thoughts of my favorite flavor combination. “If there’s peanut butter, why not let there be chocolate too?!”)

Chocolate Scarecrow Bars were then born. These were a relatively easy treat that totally satisfied My Cowboy and I’s Halloween sugar fix this past weekend. Chocolate, peanut butter, and Halloween. It doesn’t get much better than that.

Serves 16

Ingredients
  1. 1 box devil's food cake mix
  2. 1/2 cup butter, melted
  3. 1 egg
  4. 2 teaspoons vanilla, divided
  5. 3 cups mini marshmallows
  6. 1/2 cup corn syrup
  7. 1/3 cup brown sugar
  8. 1/4 cup sugar
  9. 2/3 cup peanut butter
  10. 2 cups rice crispy cereal
  11. 1 cup almonds OR peanuts (I used slivered almonds)
  12. 1 cup candy corn
Instructions
  1. Preheat oven at 350 degrees F. Combine cake mix, melted butter, egg, and 1 teaspoon of vanilla. Mix well. Press into a greased 9x13 pan and bake 10-12 minutes or until set. Remove pan from the oven and sprinkle marshmallows over top of the cake/brownie layer. Move the oven rack closer to the top of the oven and bake bars an additional 1-2 minutes, until the marshmallows begin to puff up.
  2. As soon as you pull the bars out of the oven, begin working on the top layer. Do not let the marshmallows cool, or the topping will not attach to the bars and when cut, the top layer will come apart from the bottom. Combine corn syrup, brown sugar, sugar, and remaining 1 teaspoon vanilla. Stirring frequently, bring the mixture to a boil over medium heat, then remove from heat. Add peanut butter and mix until fully incorporated. Add rice crispy cereal, nuts, and candy corn. Mix well. Place mixture over top of the marshmallow layer. I found it easiest to drop it on top in tablespoon size heaps and then pressed the mixture together. Cool completely before serving. Enjoy!

Samoa Brownies begin with my favorite, from scratch, fudge-y brownie. The brownie is followed by the traditional Samoa layers of caramel, toasted coconut, and a milk chocolate drizzle. Brownie, caramel, toasted coconut, and melted chocolate- why wouldn’t they be good?

I love brownies. If you haven’t noticed, I post a lot of brownies in various forms. Girl Scout Samoa cookies are also a love of mine. These two loves of mine combined is a lot of happiness for my taste buds. Plus, let’s take a look at the hard facts. If I could only enjoy Samoa’s when the Girl Scouts are selling cookie boxes, then I wouldn’t be a happy camper, because it’s only a certain portion of the year. For the Brownies
  1. 1 cup butter, melted
  2. 2 cups sugar
  3. 4 eggs
  4. 1 teaspoon vanilla
  5. 1 cup flour
  6. 3/4 cup cocoa powder
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
For the Samoa Filling
  1. 3 1/2 cups shredded coconut
  2. 2 (11 oz) bags Kraft caramels or caramel bits
  3. 1/4 cup milk
Topping
  1. 1/3 cup milk chocolate chips
  2. 2 teaspoons shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Make the brownies by combining melted butter, sugar, eggs, and vanilla in a large bowl. In a separate bowl combine flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet ingredients. Mix until just incorporated. Do not over-mix! Bake 30-35 minutes. I prefer brownies a touch underdone rather than overdone. Let cool completely.
  2. 2. To prepare the Samoa filling, preheat oven at 375 degrees F. Stir every 3-5 minutes for about 10-15 minutes or until the coconut is browned. Watch closely so it doesn't burn. Remove from the oven and allow to cool while you melt the caramel. Place caramels and milk in a microwave safe bowl. Place in the microwave, stirring every 60 seconds. It takes about 3-4 minutes for the caramels to melt completely. Immediately toss in the toasted coconut. Stir until coconut is completely coated with caramel. Spread over cooled brownies.
  3. 3. Melt chocolate chips in a microwave safe bowl with the shortening. Reduce power to sixty percent. Microwave in 30 second increments until melted. Stir in between each thirty second increment. Drizzle melted chocolate on top of caramel and coconut mixture. Let the Samoa filling and chocolate topping harden. Enjoy!

Raspberry Truffle Brownies

Raspberry Truffle Brownies begin with a fudge-y brownie bottom and are followed by a chocolate raspberry filling. I first came across this recipe once upon a summer when I was in high school. My Mom often subscribed to Taste of Home and as I flipped through the pages, I stumbled upon these Raspberry Truffle Brownies. Summer and raspberries just go together so they immediately called to me. I made them a couple times and loved them, but completely forgot about them for many years until a month or two ago. I became reacquainted with the recipe online and knew I had to share them with you!

I used my usual brownie recipe because it is my favorite and I love it. It is chocolate-y and fudge-y, or in other words, everything that a brownie should be. My favorite brownie recipe truly was the perfect match for this raspberry truffle filling.

Raspberry Truffle Brownies
Serves 9
Raspberry Truffle Brownies begin with a fudge-y brownie bottom and are followed by a chocolate raspberry filling. These are then topped off with additional chocolate, of course!

For the Brownie
  1. 1/2 cup butter, melted
  2. 1 cup sugar
  3. 2 eggs
  4. 1/2 teaspoon vanilla
  5. 1/2 cup flour
  6. 1/4 cup + 2 tablespoons cocoa powder
  7. 1/4 teaspoon baking powder
  8. 1/8 teaspoon salt
  9. 1/2 cup milk chocolate chips
For the Raspberry Truffle Filling
  1. 1 cup semi-sweet chocolate chips
  2. 1 teaspoon shortening
  3. 8 oz cream cheese, softened
  4. 1/2 cup powdered sugar
  5. 1/3 cup raspberry jam
For the Topping
  1. 1/4 cup milk chocolate chips
  2. 1 teaspoon shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Combine melted butter, sugar, and eggs in a large mixing bowl. Add vanilla and mix. In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Slowly add mixture to wet ingredients. Do not over mix. Incorporate milk chocolate chips. Pour batter in a greased 8 or 9 inch pan and bake 28-33 minutes. Remove from oven and let cool completely.
  2. 2. To prepare the filling, combine the chocolate chips and shortening in a microwave safe bowl and place in the microwave. Reduce the power level to sixty percent and melt in increments of 30 seconds. Stir between each interval. Set aside to cool. In the bowl of a stand mixer, place softened cream cheese and powdered sugar. Add jam and mix well. Add melted chocolate and mix well. Spread over cooled brownies.
  3. 3. To prepare the topping, melt chocolate chips and shortening in the microwave, using the same process as before. Place chips and shortening in a microwave safe bowl, reduce microwave power level to sixty percent, and stir every thirty seconds. Drizzle on top of the raspberry filling and chill in the fridge. Keep leftovers refrigerated.

No-Bake Reese’s Cups

No-Bake Reese’s Cups start with Oreo chunks piled beneath a rich and creamy peanut butter layer. To finish off, extra pieces of Reese’s and chocolate top this decadent dessert. As always, no-bake anything is what keeps me sane in my hot kitchen this time of year!

Last week, the youngest cowboy in My Cowboy’s family got hitched! His pretty little lady asked me to do the desserts for the reception. Happily, I accepted! I brooded for months about what to make. This Cowboy and his bride are both local, so I knew it would be a well-attended reception and it sure was. Therefore, whatever I decided on, I wanted it to be good! I tested, created, improved, and recreated recipes for months. 

My Cowboy quickly became a beneficiary of the project.

As time went on, I caught wind of how many people they were planning on for the reception, and knowing it was a summer wedding, I decided no-bake treats for the win. As I pinterest-ed  (ya, it’s totally a thing) wedding dessert ideas, I saw many cute pins with no-bake cups. No-bake, single serve, and cute- perfect for a wedding! 

Before my list of flavors even began, I knew without a doubt, Reese’s Cups would have it’s place at this celebration. Reese’s and peanut butter just aren’t even a question with me. I also knew I wanted varied flavors, with the hopes that everybody could find a flavor they like and have a perfectly, happily satisfied sweet tooth. 

My test kitchen eventually produced what I shall call the final four. The other three recipes will be coming at you soon. Unsurprisingly, Reese’s Cups proved My Cowboy’s and I’s favorite!

The evening of the reception, as we packed and carried the hundreds of dessert cups, my little heart felt so satisfied. You know the feeling of taking pride in your work? I’m not talking about about an excessive ego that feels YOU are the only one who can do things and do them right, but that feeling of knowing your hard labors produced results you are pleased with. Over the months of testing, I became very proud of all the recipes I produced and to see them all done, to know they were tasty, and know the were enjoyed at the wedding made my night.

Ingredients
  1. 16-20 Oreo's, in chunks
  2. 8 oz cream cheese
  3. 1 cup peanut butter
  4. 1 1/2 cups powdered sugar
  5. 8 oz Cool Whip
  6. 6 Reese's, chopped
  7. Chocolate Syrup, for drizzling
Instructions
  1. Place chunked Oreo's in the bottom of 8 5 oz cups. I probably filled them about an inch high with the Oreo's. I used 5 oz plastic cups, but you can use whatever you have on hand. I thought 5 oz was a good single serving size. Just remember if you use larger cups, there won't be as many servings.
  2. Beat cream cheese and peanut butter until smooth and completely combined. Add powdered sugar and combine. Fold in the Cool Whip. *Refrigerate the peanut butter filling for 2-3 hours. Once chilled, Place the peanut butter mixture on top of the Oreo chunks. Leave a little space at the top of the cup, because they are easier to eat that way.
  3. Top with Reese's chunks and drizzle with chocolate syrup. Keep refrigerated. Enjoy!
Notes
  1. *You can also wait to refrigerate the filing until after it is placed in the cups. It will take less time to chill, but I prefer to do it the other way around, because the longer the filling sits on the Oreo's, the more likely the Oreo's are to become soggy, but they are usually fine for about a day. So I generally only make up as many as we will eat that day. Keep the filling in the fridge if you choose to do it this way and just pull it out whenever you are ready to make more cups!

Reese’s Cheesecake Bars

Reese’s Cheesecake Bars are a delectable dessert that begin with an Oreo crust. The filling is a Reese’s loaded, peanut butter cheesecake. These beauties are then topped off with a fudge-y ganache. 

I simply adore a chocolate and peanut butter loaded cheesecake dessert. So does My Cowboy. And that fact sure helps us get along swell. If we’re being honest, a cold piece cheesecake on a warm day is bound to help any marriage succeed.

Think about it. Aren’t you just in a better mood when you eat cheesecake? I sure am!

Significantly so. And My Cowboy is too. So I guess that’s it- after all these years we’ve figured it out. The secret to a successful and happy marriage is cheesecake. In particular these Reese’s Cheesecake Bars. I speak from personal experience when I suggest/prescribe these for marital bliss. This is huge. 

Speaking of huge, these Reese’s Cheesecake Bars are just how I like them-piled high. Of course, cheesecake is a rich dessert, so a smaller piece goes a long way. Unless you’re me or My Cowboy, then it doesn’t. 

Something I find humorous is when a recipe for an 8×8 inch or 9×9 inch square pan claims to yield 16-20 bars. What the hay?! Those are the yields of a 9×13 inch pan. At least my eight and nine inch pans don’t make that many bars. Just Today I looked over a brownie recipe for a 9×9 inch pan that claimed to yield 2 1/2 dozen bars. So that tallies up to 30 bars from a little square pan of brownies, maybe if we serve half bite bars…maybe?

Serves 12

For the Crust
  1. 15 Oreo cookies, finely crushed
  2. 1/4 cup butter, melted
For the Cheesecake Filling
  1. 12 oz cream cheese, soft
  2. 3/4 cup sugar
  3. 1/2 cup peanut butter
  4. 1/2 cup sour cream
  5. 8 Reese's, chopped
  6. 2 eggs
  7. 1/2 teaspoon vanilla
For the Ganache
  1. 1 cup milk chocolate chips
  2. 2 tablespoons peanut butter
  3. 2/3 cup cream
Instructions
  1. 1. Preheat oven at 325 degrees F. Combine the Oreo crumbs and melted butter in a small bowl. Press into a greased 8x8 inch or 9x9 inch pan. Press into the pan with the bottom of a cup. Bake six minutes then remove from oven and let cool until filling is made.
  2. 2. For the filling, combine the cream cheese and sugar. Do not overmix. Add the peanut butter, sour cream, eggs, and vanilla. Mix until just combined. Fold in the Reese's chunks. Bake at 325 degrees F for about 45 minutes. I would check it at about 40 minutes to ensure it is not becoming over done. The middle will still jiggle a little, but the sides will be set. Once baked, cool in the fridge while you make the ganache.
  3. 3. To make the ganache, bring cream to a boil in the microwave. Place chocolate chips and peanut butter in a medium sized bowl. Pour the cream over top and mix until combined and all the chocolate is melted. Pour on top of the bars and spread. Refrigerate at least 4-6 hours. Enjoy!
