If you don’t know what cookie pie is, you are missing out! You can find my original cookie pie recipe by clicking here. It is made with a chocolate chip cookie base and most importantly stuffed with a center of endless Reese’s. Cookie Pie is one of my favorite desserts and this Snicker’s Caramel Monster Cookie version is so hard to put into words, because it is that good. I have tried many different versions of cookie pie containing various cookie bases and stuffings with a lot of success, but this recipe is one of the best I have had!

Snickers Caramel Monster Cookie Pie starts out with my favorite monster cookie base. In addition to a slice of soft, butter-y cookie, it is loaded with milk chocolate, white chocolate, and peanut butter chips. Even though I know that technically for a monster cookie to be considered ‘monster’, it is supposed to include not only chocolate chips, but M&M’s as well, sometimes I break the rules. I listed the M&M’s as optional, because to let you in on a little secret, I rarely add them. The milk chocolate, white chocolate, peanut butter, and oats make this cookie base monster enough in itself, however if you want to add M&M’s or Reese’s Pieces in addition to the chips, by all means go for it!

Let’s talk about the center of this wildly, madly, truly, delightful dessert. It is stuffed with Snicker’s chunks and homemade caramel. Sure, you can use bought caramel, but I promise you that the homemade caramel I link to in the recipe makes Snicker’s Caramel Monster Cookie Pie positively irrefutable. Consequently, I have a hard time saying no!

Ingredients
  1. 1/2 cup butter, soft
  2. 1/2 cup peanut butter
  3. 1/2 cup sugar
  4. 1/2 cup brown sugar
  5. 1 teaspoon vanilla
  6. 1 egg
  7. 1 cup old fashioned oats
  8. 1 1/4 cups flour
  9. 1/2 teaspoon baking soda
  10. 1/8 teaspoon salt
  11. 1/2 cup milk chocolate chips
  12. 1/2 cup white chocolate chips
  13. 1/4 cup peanut butter chips
  14. 1/4 cup M&M's or Reese's Pieces (optional)
  15. 12 fun sized Snicker's, roughly chopped
  16. 1 cup caramel sauce (for my favorite homemade recipe, see note)*
  17. ice cream
  18. hot fudge sauce**
Instructions
  1. Preheat oven @ 325 degrees F. Cream the butter and sugars at least 2-3 minutes until smooth and creamy. Add vanilla and mix. Add egg and mix.
  2. In a separate medium sized bowl, mix oats, flour, baking soda and salt. Gradually mix into the wet ingredients. Fold in milk chocolate, white chocolate, and peanut butter chips, and M&M's or Reese's Pieces (if using).
  3. Grease a 9 inch cake pan, cast iron skillet, or pie plate. I like how cast iron bakes, but will choose the cake pan or pie plate over it for this recipe, because it takes up less storage space for the leftovers.
  4. Press half of the cookie dough into the baking medium of choice. Pour the caramel sauce on top, followed by the Snicker's pieces. Scatter the remaining cookie dough over the caramel/Snicker's layer by tablespoons. Bake 20-25 minutes, or until the edges begin to turn golden. You can try testing the center as well to ensure it is done, but remember there will be caramel. I always bake it so it is just a touch underdone. I like it just underdone enough it is gooey. Let cool at least 10-15 minutes or else it will be a hot mess to scrape out of the pan (which isn't all bad ;)).
  5. Serve with ice cream, hot fudge, and extra caramel sauce! Enjoy!

I have tried numerous brookie recipes and there are several combinations that I have found so tasty. However, Caramel Monster Brookies just might be my favorite version, because brownie, caramel, and monster cookie create one tasty combination. It can’t be denied that a caramel center and monster cookie layer set the bar pretty high. On top of all that, these layers create a moist and ooey gooey dessert. I love ooey gooey. Do you love ooey gooey?

So I suppose the combination of brownies and cookies in the blogging world isn’t new. Over the last five or so years, it has become popular to combine these two widely loved desserts. And boy do they go together well! Whether it be regular chocolate chip cookies or something a little more vamped up like this monster cookie version, brownies and cookies are a combination that never leave me disappointed.

So there is something I have discovered about myself. And that discovery is that I am a stuff-er. I stuff many desserts. Brownies, cookies, cookie pie, and now brookies have all been stuffed here on Butter, Love, and Cowboys. When you take a timeless recipe and stuff it, it just becomes something it wasn’t before.   1. 1 cup butter, melted
  2. 2 cups sugar
  3. 4 eggs
  4. 1 teaspoon vanilla
  5. 1 cup flour
  6. 3/4 cup cocoa powder
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
Caramel Layer
  1. 1 14 oz can sweetened condensed milk
  2. 1 11 oz bag caramels or caramel bits
  3. 4 tablespoons butter
Monster Cookie Layer
  1. 1/2 cup butter, soft
  2. 1/2 cup peanut butter
  3. 1/2 cup sugar
  4. 1/2 cup brown sugar
  5. 1 teaspoon vanilla
  6. 1 egg
  7. 1 cup old fashioned oats
  8. 1 1/4 cups flour
  9. 1/2 teaspoon baking soda
  10. 1/8 teaspoon salt
  11. 1 cup milk chocolate chips
  12. 1/2 cup white chocolate chips, optional
  13. 1/2 cup peanut butter chips
  14. 1/2 cup m&m's
Instructions
  1. Preheat oven at 350 degrees F. Make the brownie layer by combining melted butter, sugar, eggs, and vanilla in a large bowl. In a separate bowl combine flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet ingredients. Mix until just incorporated. Do not over-mix! Place in a greased 9x13 inch pan. Bake about 25-28 minutes, or until the brownie layer is almost done but not fully.
  2. While the brownies are baking make the caramel layer by placing sweetened condensed milk, caramels, and butter in a medium sized saucepan. Melt and stir occasionally on medium heat until everything is smooth and well combined.
  3. Also while the brownies are baking, make the monster cookie layer. Cream butter, peanut butter, and sugars until light and fluffy, about 2 minutes. Add vanilla and continue to cream about 1 more minute. Add egg and mix. In a separate bowl, combine oats, flour, baking soda, and salt. Gradually add to wet ingredients. Mix in milk chocolate chips, white chocolate chips (if using), and peanut butter chips. Fold in the m&m's. (You can use any kind, but I used peanut butter m&m's and we loved it! Caramel ones would go well too!)
  4. Layer the caramel on top of the brownie. Next, scatter the monster cookie dough in teaspoon sized pieces all over the top of the caramel, until evenly distributed. Return to the oven for about 10-12 minutes, or until the cookie layer is baked through, edges will just barely begin to turn golden. When it comes to these bars, a little underdone is better than a little overdone! Let cool at least 20 minutes so the caramel has some time to settle. Enjoy!
Notes
  1. *I have used a brownie mix for the brownie bottom before and it turns out really well since brownie mixes are quite moist. The homemade brownie kicks it up a notch, but there is no shame in using a brownie mix for the bottom! If you do, just be aware you will have to adjust the baking time for the brownie before adding the caramel and monster cookie layers. It took about 18 minutes to reach that almost done, but a touch underdone state when I did it. If you do use a brownie mix, I recommend using butter instead of oil, milk instead of water, and adding some vanilla extract.

I love brownies. If you haven’t noticed, I post a lot of brownies in various forms. Girl Scout Samoa cookies are also a love of mine. These two loves of mine combined is a lot of happiness for my taste buds. Plus, let’s take a look at the hard facts. If I could only enjoy Samoa’s when the Girl Scouts are selling cookie boxes, then I wouldn’t be a happy camper, because it’s only a certain portion of the year. For the Brownies
  1. 1 cup butter, melted
  2. 2 cups sugar

  1. 3 1/2 cups shredded coconut
  2. 2 (11 oz) bags Kraft caramels or caramel bits
  3. 1/4 cup milk
Topping
  1. 1/3 cup milk chocolate chips
  2. 2 teaspoons shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Make the brownies by combining melted butter, sugar, eggs, and vanilla in a large bowl. In a separate bowl combine flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet ingredients. Mix until just incorporated. Do not over-mix! Bake 30-35 minutes. I prefer brownies a touch underdone rather than overdone. Let cool completely.
  2. 2. To prepare the Samoa filling, preheat oven at 375 degrees F. Stir every 3-5 minutes for about 10-15 minutes or until the coconut is browned. Watch closely so it doesn't burn. Remove from the oven and allow to cool while you melt the caramel. Place caramels and milk in a microwave safe bowl. Place in the microwave, stirring every 60 seconds. It takes about 3-4 minutes for the caramels to melt completely. Immediately toss in the toasted coconut. Stir until coconut is completely coated with caramel. Spread over cooled brownies.
  3. 3. Melt chocolate chips in a microwave safe bowl with the shortening. Reduce power to sixty percent. Microwave in 30 second increments until melted. Stir in between each thirty second increment. Drizzle melted chocolate on top of caramel and coconut mixture. Let the Samoa filling and chocolate topping harden. Enjoy!

Samoa cookies are my favorite Girl Scout treat. I really like some of the others too, but Samoa’s have just always done the trick for me. Something I love about these Samoa Bars are they are substantially cheaper to make at home. A batch of Samoa Bars also goes much farther than a box of the cookies!

As is the story with many of my recipes, my older sissie Jessie introduced me to these bars. They have always been more of a spring/summer treat to me because the first time she made them for my family in Montana, she made them for the fourth of July. Shortbread Crust
  1. 3/4 cup butter, soft
  2. 1/2 cup brown sugar
  3. 1/2 teaspoon vanilla
  4. 1 egg
  5. 2 cups flour
  6. 1/4 teaspoon salt
Topping
  1. 3 cups shredded coconut
  2. 1 11 oz bag caramels
  3. 3 tablespoons milk
  4. 12 oz milk chocolate chips
  5. 1-2 tablespoons shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Make the shortbread crust by creaming the butter and sugar. Add the vanilla and egg, then mix well. Gradually mix in the flour and the salt. Press crust into a greased 9x13 inch pan. Bake 20-25 minutes or until the edges are lightly browned and crust has set. Remove from oven and cool completely.
  2. 2. To make the topping, spread the coconut on a cookie sheet. Place in the oven bake at 350 degrees F for 10-15 minutes. Stir the coconut every five minutes until it is golden and toasted. Watch it carefully or the coconut could burn.
  3. 3. Place the caramels in a microwave safe bowl with the milk. Microwave on high in 1 minute intervals, stirring each time until caramels are completely melted. Combine the melted caramel and coconut. Spread the topping on the shortbread crust.
  4. 4. After the topping has cooled, cut into about 16-20 bars, depending how big you would like them. Melt the chocolate chips, with the shortening, in the microwave or on the stove. I usually do it in the microwave, at 60 percent, in 30 second intervals, stirring in between each interval, until the chocolate has melted. Dip the bottom of each bar into the chocolate and place the dipped bars upside down until chocolate hardens. Once the chocolate has hardened, flip the bars over and drizzle with more milk chocolate on top. Let chocolate set and store bars in an airtight container. Enjoy!

Caramel Peanut Butter Halloween Monster Munch is a quick, tasty, and festive little treat. It is a combination of pretzels, popcorn, Reese’s Pieces, and candy corn, all coated in a smooth caramel-y peanut butter mixture. It is a cinch to throw together and would be perfect for any Halloween gathering. 

Let’s talk Halloween-I absolutely love it. Even as an adult, it still continues to rank high on the charts as one of my favorite holidays. As of last year, My sister-in-law, The Rancher’s Wife, and I started the tradition of spending an evening together to make Halloween goodies to enjoy, while the two of us and our crew watch Hocus Pocus- which just happens to be my favorite Halloween movie. We think it’s a pretty rad way to spend an October evening 🙂

As I contemplated what new treat to try last Friday for our movie night, I thought about all these Halloween party mixes I have seen and decided to come up with my own version. Ingredients
  1. 1 cup corn syrup
  2. 2 cups brown sugar
  3. 1 can sweetened condensed milk
  4. 1 cup peanut butter
  5. 1/2 teaspoon salt (add more or less to taste)
  6. 1 teaspoon vanilla
  7. 12 cups popped popcorn
  8. 5 cups pretzels (can be mini pretzels or pretzel sticks)
  9. 3 (4 oz) boxes Reese's Pieces
  10. 1 cup candy corn
  11. 1 cup peanuts or almonds (optional)
Instructions
  1. Mix the corn syrup and brown sugar in a medium size saucepan and bring to a boil. Boil for one minute and remove from heat. Add the sweetened condensed milk, peanut butter, salt, and vanilla. Stir until smooth and the peanut butter is melted and incorporated into the mixture. In a large bowl, combine the popped popcorn, pretzels, Reese's Pieces, candy corn, and nuts (if using). Pour the caramel and peanut butter mixture over the top, mix until all ingredients are evenly coated. Serve and enjoy! Store leftovers in an air tight container or Ziploc bags.

Caramel Apple Skillet Pull Apart starts out with a simple, no-rise dough. That’s right- no rise- all you have to do is mix it up and let it rest for ten minutes! While the dough is resting, caramelize the apple-y, cinnamon-y filling and bake. While it bakes, you’ll throw together the homemade caramel sauce. If you’re short on time or don’t want to take the time to make the caramel, you could always use a store bought variety, however I highly recommend this homemade version. It’s easy as pie, it just requires a little boiling, and is so good!

For the Apple Filling
  1. 2 medium size apples, cut into small chunks
  2. 1/3 cup butter
  3. 1/2 cup brown sugar
  4. 2 teaspoons cinnamon
  5. 1/2 teaspoon vanilla
For the Dough
  1. 2 1/2-3 cups flour
  2. 1 tablespoon instant yeast
  3. 1/4 teaspoon salt
  4. 1 tablespoon vegetable oil
  5. 1/3 cup sugar
  6. 1 cup warm water
*For the Caramel Sauce
  1. 1 cup brown sugar
  2. 1/4 cup salted butter
  3. 1/2 cup cream
  4. 1 tsp vanilla
For the Glaze
  1. 1 1/2 cups powdered sugar
  2. 1/3 cup cream
  3. 1/2 teaspoon vanilla
Instructions
  1. 1. Preheat oven at 400 F. Begin by making the apple filling. After cutting the apples into small chunks, melt butter in a 12-inch, cast iron skillet. Add the apples, brown sugar, cinnamon, and vanilla. Cook over medium heat 7-10 minutes, until apples soften and cook most the way through. Remove from heat.
  2. 2. To make the dough, combine 1 cup flour and the yeast in a bowl, set aside. In the bowl of a stand mixer, place, salt, vegetable oil, sugar, water, and the yeast mixed with one cup flour. Mix until it begins to come together. Gradually add the remaining flour. After you have added the initial 1 cup mixed with the yeast, you will likely need the remaining 1 1/2 cups. However, if the dough is still too sticky, add the remaining 1/2 cup of flour, only adding a couple tablespoons at a time. Do NOT use more than 3 cups of flour. I usually need a little more than the initial 2 1/2 cups, but rarely need an entire 1/2 cup after that. Just add a little at a time to avoid adding too much flour. Shape dough into a ball, place in a large bowl, and let rest in a warm place for ten minutes.
  3. 3. While the dough is resting, place all the caramel sauce ingredients into a medium sized saucepan. You can turn the heat on low to begin melting the ingredients, but don't let it cook or boil yet. You will do that while the dough is in the oven. (Stirring the caramel sauce as it boils is a full-time job.) After the dough has rested, remove it from the bowl and cut into bite-size chunks, about 35-40 pieces. Place in the skillet and toss gently into the apple filling ingredients with a rubber spatula. Bake about 15 minutes or until the top begins to brown and the dough is cooked through.
  4. 4. Turn up the heat on the caramel sauce ingredients and bring to a boil. Boil rapidly 7-10 minutes, or until desired consistency is reached. You will have to stir the entire time. Remove from heat. I like to set in the freezer on a hot pad for about 10 minutes to cool down a little bit.
  5. 5. To make the glaze, whisk together the powdered sugar, cream, and vanilla. Add more or less cream until desired consistency is reached. Drizzle about 1/2 cup of the caramel sauce and most of the glaze on top of the pull apart bread. We like to add extra caramel sauce and glaze to our individual servings, because if you add too much caramel and glaze in the skillet, the pull apart bread in the skillet will become soggy. Serve with ice cream if desired.
Notes
  1. *This is the caramel sauce recipe halved for the pull apart bread, but I usually just make a full batch because we love this sauce for ice cream and many other desserts. So if you want leftover caramel sauce, go ahead and make a full batch by doubling the measurements listed.

Caramel Chip Bars

Oh boy is this recipe a doozy! Caramel Chip Bars are about as tasty as it gets. This is another recipe from my sister Jessie. So many of both My Cowboy’s and I’s favorite recipes come from her. She is just a whiz in the kitchen. This is a brownie-like bar that is one of my main picks when it comes to making a dessert to take and share.

Caramel Chip Bars are as easy as they are delicious and come together in a cinch. The brownie part of this dessert comes from a simple cake mix, oil, eggs, AND plenty of chocolate chips! The caramel layer is semi-homemade, but tastes so great. Honestly it’s a filling I use in a lot of different recipes now. If I am too short on time to do a homemade sauce, I will even serve it as caramel sauce for ice cream or dip for fruit.

Ingredients
  1. 1 box chocolate cake mix
  2. 1/2 cup oil
  3. 2 eggs
  4. 2 cups milk chocolate chips
  5. 1 cup white chocolate chips
  6. 1/3 cup toffee bits (optional)
  7. 1 11oz bag caramels
  8. 1 14 oz can sweetened condensed milk
  9. 1/2 cup butter
Instructions
  1. 1. Preheat oven at 320 F. Mix the cake mix, oil, and eggs until combined. Add milk chocolate chips, white chocolate chips, and optional toffee bits. Combine by hand. Press half of the dough into a greased 9x13 pan. Bake for twelve minutes. Cool for ten minutes before adding caramel.
  2. 2. While the first cake layer is baking and cooling, unwrap the caramels and place in a medium size saucepan with the sweetened condensed milk and butter. Melt over medium-low heat until well-combined, stirring occasionally. Once the mixture is mostly melted, I like to whisk it long enough to ensure there are no chunks.
  3. 3. Pour caramel over the first cake layer. Top with remaining cake batter by sprinkling it over the caramel in teaspoon-fulls Bake an additional 20-25 minutes. These bars are great warm or cold, but I usually let them cool an hour or two.
Notes
  1. If you're looking for a less chocolate-y option, use a yellow cake mix. I really, really, REALLY love them as is though 🙂

Last weekend, we made the trek up to Montana for Easter. My mom made Pioneer Woman’s Caramel Apple Pie for Easter dessert. Now let me tell you, I am NOT a pie fan. Call me crazy but I do not believe pie crust belongs in any dessert. Pie crust is wonderful with chicken pot pie or other dinner food, but I detest it with anything sweet. That pie though. I still swoon when I think about it. The best part, aside from the buttery crumb topping, was definitely the caramel sauce. It left such an impression on me, I just HAD to whip up a double batch this weekend.

This Caramel Sauce has been making me so happy that I have been thinking of ways to put it on almost every treat I have been consuming. A drizzle here, a drizzle there. Who am I kidding? I don’t just drizzle, I drench. Honestly though, I think my favorite way to eat it is warmed up and straight from the jar. Last night I finally had a bite of ice cream with a spoonful of caramel sauce. It was fantastic as well. Thank you Pioneer Woman. Thank you.

This recipe is super easy too. When it comes to dessert sauces, I typically prefer they are a thick-ish consistency. The original recipe was more runny so I boiled it in an attempt to reach my desired consistency. It worked great- not so think you have to slab it on, but thick enough it sticks and oozes all over whatever dessert you choose to put it on.

Ingredients
  1. 2 cups brown sugar
  2. 1/2 cup salted butter
  3. 1 cup cream
  4. 2 teaspoons vanilla
Instructions
  1. Place all ingredients in a medium sized saucepan. Melt together over medium-low heat. Whisk to combine well. Bring to a rapid boil. Boil 5-7 minutes. Once it cools off a few minutes, if it still is not as thick as you would like, boil 2-3 minutes longer or until desired consistency is reached. Store in the refrigerator. Serve warm over ice cream or any other sweet thing you would like!
