The Art of Roping

Shortly after My Cowboy and I started dating, he invited me to watch him compete in a team roping with his boss at the time. I was all for it so I tagged along. As I enjoyed the evening of observing him, I remember thinking, “I really need to marry this cowboy.” Nothing was as attractive to me as a man on a horse. That was even multiplied in my smitten mind by the whole roping part of the deal. 

I still love to watch him rope. It never gets old. I certainly can’t rope myself, even attempting in the least scares me, because it takes a lot of skill. Although, that very first night I ever saw him rope, he told me he would have me roping in no time. Psh…five years later and I’ve  never even swung a rope on the ground! Maybe someday.  For now, I will just continue to enjoy gawking at him.

See? Doesn’t he look good? I can never seem to get enough of it. As I’ve already mentioned, in my five years of marriage to this cowboy, I have learned that very few things bring him as much happiness as a day spent roping and riding.

This family branding that I have been telling you all about is where all of our cowboys started to rope. With a little help from those who are older and already had the skill mastered, they slowly learned themselves. Fortunately, My Cowboy has a great roper for a father, who was able to pass on what he knew to all five of his boys. Isn’t that one of the greatest blessings of this life? Learning a skill at the feet of someone who understands it and was once in your shoes, progressing and growing themselves. And the understanding that they once needed a master of the art to teach them and started out just like you, with that thirst for any knowledge and a willingness to work so they could eventually land on their feet, in a place where they would have the skill and abilities to teach others who likewise will need the benefits of their instruction. Like these cowboys, I imagine most of us owe a lot of what we have learned to our parents. I sure do!

This post is entitled “The Art of Roping” for a reason. It is an art. All of the things a roper has to keep their focus set on to glide that loop right were it is intended to go is so impressive. There is such a beauty and eloquence in these skills amidst the seeming rudeness of animal behavior, unpredictable weather conditions, manure, and days laden with dust.

Looking into these faces and getting a glimpse of the satisfaction they feel from a long day’s work, participating in ways they thoroughly enjoy is something that is a privilege to see.

I’ve shared several pictures of this little cowboy nephew of ours. With help from those who have been where he is, he dragged in his first calf this year!

I am so grateful for the many individuals who have blessed my life, by sharing with me what they know so I can grow and progress in ways that bring me closer to my goals. The patience and love that it requires to effectively teach someone has touched me many times from the countless individuals who have helped me learn throughout my lifetime.

God’s patience is another gift for which I am continually thankful. A seasoned roper sees the potential in the eyes of a little cowboy, like our nephew, as they remember how they got their own start with a rope. The fact that God doesn’t just view me as I am now but with the potential of all I can become if I choose diligence and hard work is something that is extremely special to me.

Chocolate Truffle Cake

Chocolate Truffle Cake is one of my absolute favorite go-to cakes. I use this chocolate cake base for a lot of different recipes. However, the original recipe is topped with a most luscious chocolate chip frosting! This recipe came from my sister Jessie. She has soooo many fantastic recipes in her arsenal and this one is no exception. 

Last month I made this cake for my mother-in-law’s birthday. Actually, I made this Chocolate Truffle Cake twice for her birthday. In one day. You wanna know why? Because the first time I made it, I forgot one of the most key ingredients-the ingredient that just happens to make this one of the most moistest cakes on earth- sour cream! 

The other sad part is, I didn’t even realize I had forgotten it until I pulled it out of the oven. So I rushed to remake the cake in time for her birthday dessert and popped the incomplete, sour cream-less one in the freezer. I tasted it and it tasted fine so I figured I’d find a use for the flopped cake sometime in the future. 

Wanna know a secret? I despise boxed cake mixes. I can totally do box brownies, but not a cake mix, unless, like this recipe, it is totally souped up! Chocolate Truffle Cake uses a cake mix, pudding packets, and a few other simple ingredients, making this one of the quickest cakes to throw together in the history of birthdays.  I promise, no one will have a clue it all started with a cake mix! And you are talking to a cake mix hater 🙂

Chocolate Truffle Cake
A beautiful and moist chocolate cake topped with the most luscious chocolate chip frosting!

For the Cake
  1. 1 box chocolate cake mix
  2. 2 boxes chocolate pudding mix (3.4 oz each)
  3. 2 cups sour cream
  4. 1/2 cup butter, melted
  5. 5 eggs
  6. 2 cups chocolate chips (we prefer milk chocolate)
For the Frosting
  1. 1 1/2 cups sugar
  2. 1/2 cup milk
  3. 1/4 cup butter
  4. 1 1/2 cup chocolate chips (we prefer milk chocolate)
  5. 2 teaspoons vanilla
For the Cake
  1. 1. Preheat oven at 325 F and grease a standard size bundt pan.
  2. 2. Combine cake and pudding mixes. Create a well in the middle and dump sour cream, butter, and eggs into the well. Mix together until very well combined. The batter will be very thick.
  3. 3. Add the chocolate chips and fold into the batter.
  4. 4. Bake 50-55 minutes or until a toothpick inserted comes out clean. Let cool ten minutes and flip onto a serving plate.
For the Frosting
  1. 1. In a medium size saucepan, bring sugar, milk, and butter to a boil. Boil for 45 seconds.
  2. 2. Remove from heat and add in the chocolate chips and vanilla. Stir until smooth. Let cool ten minutes and spread over the cooled cake. Enjoy!

Branding Part 3: Roping and Groundwork

Howdy all. I still have a lot of branding pictures to share and I haven’t even gotten to the best part- the actual branding! While some of our cowboys and cowgirls rope the calves, there are also bodies on foot, who take care of the groundwork. Groundwork includes vaccinations, castrating, earmarking, and, you guessed it- branding!

Here’s how it goes- a cowboy/cowgirl heels a calf and drags it towards the branding iron, where someone on foot will place the head-catcher on the calf’s head. The head catcher helps keep the calf in place as those on the ground proceed to vaccinate, castrate, earmark, and brand. Once finished, they release the head catch, and off the calf goes- usually pretty swiftly!

The roping part is the part My Cowboy lives for. Few things in this life make him as happy as a day spent on the range branding, where he gets to ride and rope. He despises anything that has to do with a calf table. All operations are different and have to do what works best for their outfit, so absolutely no disrespect is meant towards any calf-table users. There are pro’s and con’s to roping, just like there are pro’s and con’s a calf table. I’m simply highlighting how much our crew LOVES their time spent roping.

Oreo Peanut Butter Apple Salad

This Oreo Peanut Butter Apple Salad is one of my new favorites! In my opinion, there is nothing that has the ability to spice up a family dinner quite like a fruit or jello salad. This would be a great addition to the table for Mother’s Day this Sunday. A lot of these types of salads are pretty much dessert, but I just pretend they’re not to justify eating dessert after the meal as well 🙂 The way I see it, if you eat enough, you will totally get a serving of apples. 

My adoration of the combo of Oreo’s and peanut butter came around the time the Lindsay Lohan version of “The Parent Trap” came out. It is still one of the most loved movies of my childhood! I was only about six or seven when my older sisters and I rented it on the Dish. We made a VHS recording of it and I watched that movie over and over and over and over and over. For years.

Remember the part where Hallie teaches Annie to dip Oreo’s in peanut butter? I started doing it too and have loved it ever since! I give that movie partial credit for the fact that Peanut Butter Oreo’s are now my favorite rendition of the cookie. I have been wanting to try incorporating peanut butter into a fruit salad for a while. So when I found this gem of a recipe over at Something Swanky, with peanut butter AND Oreo’s, I knew I would love it. She wrote it as a variation on Snickers Apple Salad- which is fabulous as well!

With only My Cowboy and I in our household, I don’t make salads like these very often because it is so hard for the two of us to get through an entire batch. So they are kind of a special occasion type of deal for us. I love to make them when I get the chance to feed a group of people that can help us eat it all. My sister and her family visited us a while back. This meant I had enough people to help us power through this delicious Oreo Peanut Butter Apple Salad! Not that it was a very difficult task by any means. I think My Cowboy and I almost could have eaten this salad entirely on our own 🙂

Oreo Peanut Butter Apple Salad

Ingredients
  1. 3.75 oz vanilla pudding mix
  2. 1 1/4 cup milk
  3. 1/2 cup peanut butter
  4. 8 oz Cool Whip
  5. 4 apples
  6. 20-25 Oreo's, chunked
Instructions
  1. In a large bowl, whisk the milk and pudding mix. Let thicken a couple minutes. Place peanut butter in a small, microwave-safe dish and microwave about twenty seconds, until melted, but not hot. Mix into the pudding. Fold in Cool Whip. Cut the apples into chunks and incorporate in the pudding mixture. If not serving immediately, place in the fridge for 1-2 hours. This isn't necessary, but will give time for the flavors to combine. The Oreo's get mushy pretty fast, so I prefer to wait to fold them in until right before I serve the salad. When you are ready to add the Oreo's, break them into large chunks and add them to the salad! Drizzle with hot fudge, or Hershey's Syrup and melted peanut butter if desired. I also like to garnish it with a few extra Oreo's. Enjoy!

Branding Part 2: Sorting

Next in our branding day comes sorting the babies from the mamas. This means, before we start the actual branding, after the calves and mothers have been gathered up, the cowboys and cowgirls sort out the mamas from the corral where the branding will take place. There are a couple reasons for this. A most practical one is that the corral where this branding happens isn’t big enough to keep all the mamas in there while they rope the calves. Another reason is that all babies are different, but when it comes to calves, they are usually easiest to deal with if mama isn’t too close by.

Let me explain.

Most of these girls handle their mothering job very well. If they don’t, they are generally culled from the herd. Naturally, they have protective instincts and intend to ensure that no harm befalls their babies. Which is how it should be. So it is a bit easier to rope a calf with mama out of the way. Those mother instincts can also make tougher work for our crew once a cowboy or cowgirl throws a loop around their calves’ heels and drags them off toward the branding iron. Especially in a situation like this where the corral isn’t very big.

This is where sorting comes in handy. During the sorting process, some stay on their horses, while others help on foot. Once in a while, someone may be found flat on their face as an attempt to help chase out a mama or hold back a calf, landed them anywhere but their feet. That just makes the experience all the more interesting 🙂

I can’t say the girls are always that happy to be separated from their calves by a corral. Sometimes I just wish I could tell them, “Hang in there Mama! It’s only for a little bit and overall, it’s for your baby’s own good.”

When it comes to calving season there are ALL SORTS of things I would love to talk to the mama’s about in regards to what is truly for their calve’s best interest.

Brownies and Bars, No-Bake

Peanut Butter Bars

There are a million different recipes out there for “Lunch Lady” Peanut Butter Bars. Well, these are the Peanut Butter Bars MY lunch lady made me from the time I was in third grade all the way up to my senior year of high school. Not only were these my absolute FAVORITE treat the school cooks made, but they were always served with my most loved main dish the school made as well-meatballs on steamed rice, dinner roll, and green beans! 

As if I wasn’t satisfied enough after the meal itself, I got to top it all off with these bars! Another thing about my school cooks- they were so generous. If they knew they were serving you your favorite meal, by-golly, they made sure to serve you up a good pile of it! Once you reached high school age, any dessert leftovers were free game after everybody had made it through the lunch line. My meatballs on rice was always accompanied by at least two, sometimes three or more, of these Peanut Butter Bars. I often went up for seconds or thirds! What a gluttonous teenager I was. Even now, it is hard for me to contain and ration myself if a pan of these babies are near.

Another great thing about these bars is they are no-bake. We are coming up on summer where the days are too hot to want to turn on the oven. A lot of Peanut Butter Bars are of the baked variety. Until I was about eleven or twelve, I didn’t even know that there was such a thing as a baked Peanut Butter Bar. It was a bitter disappointment to me the first time I thought I was getting a Peanut Butter Bar just like the ones at my school, to see the hot pan being pulled out of the oven!

I have totally warmed up to baked Peanut Butter Bars, but when I think of a traditional Peanut Butter Bar, these are still the exact ones that I think of, crave, desire, and need-or whatever you wanna call it. Need probably fits the description best.

Peanut Butter Bars
A creamy no-bake Peanut Butter Bar that will satisfy your sweet tooth every time.

Ingredients
  1. 2 cups peanut butter
  2. 3 cups powdered sugar
  3. 2 cups Rice Krispie's Cereal
  4. 1/2 cup butter, soft
*Chocolate Frosting
  1. 1/2 cup butter, soft
  2. 1/4 cup cocoa powder
  3. 2-3 cups powdered sugar
  4. 1/4 cup milk, for consistency
Instructions
  1. Mix peanut butter and butter until smooth and creamy. Add powdered sugar, one cup at a time until fully incorporated. Combine well. Fold in Rice Krispie's. Press into a greased 9x13 pan.
Chocolate Frosting
  1. Beat butter and cocoa powder until smooth. Add powdered sugar, 1 cup at a time, mixing well in between each addition. Add milk and beat until smooth and creamy, you may use more or less than the listed 1/4 cup. I like to beat my frosting at least 2-3 minutes after every ingredient is added, until it is very smooth, creamy, and slightly whipped. Spread over top of peanut butter layer.
  2. You probably won't need all of the frosting. Generally I like desserts pretty heavily frosted, but it really doesn't take much to make these great! Refrigerate any unused frosting. It's always good to have a little extra frosting on hand 🙂

  1. *I prefer the chocolate frosting, but you can also melt 2 cups of chocolate chips with a little shortening and use that as the topping instead of the chocolate buttercream. They taste great either way!

Branding Part 1: Gathering

We just finished up April. That means branding has been in full swing around this ranch. On most Fridays and Saturdays last month, you were sure to find our cowboys and cowgirls riding and roping the range. And without fail, they’d come home smelling like singed hair.

A few Fridays ago, we had the favorite family branding. This is the branding where My Cowboy’s family brands just their cattle. Most of the other weekends they will be branding with others in their cattle association. Those branding days are still great fun, but what’s better than just looking after your OWN cows?! My Cowboy looks forward to this branding all year. It probably hits the list as his third favorite holiday.

I will write all about our average branding day, but let’s start at the beginning- gathering.  Naturally, if we want any calves to brand we have to gather ’em first! We like to start early, but not too early. Seven or eight am seems to be the usual. Personally, I despise rousing anytime before the clock ticks seven. So I sure am happy they don’t like to start TOO early! The riders saddle up and are off to begin the task of bringing in the Mama’s and their babies to the corral.

I realize this post includes the first photos of our crew so I will make sure to point out the most common faces that you will see on Butter, Love, and Cowboys. My in-law’s had four other cowboys, five altogether, if you count My Cowboy. Now they are all grown and love to be in the saddle as much as any men I know. Four of the five brothers saddled up for branding this particular day. 

We have many uncles, cousins, and friends who always join in to help get the work done as well.

Chocolate Chip Cookie Dough Cheesecake

Chocolate Chip Cookie Dough Cheesecake from Butter, Love, and Cowboys

We are cheesecake lovers around here. My Cowboy and myself rate cheesecake as one of our top desserts! We like all different kinds too. I have yet to come across a flavor of cheesecake I didn’t find worth eating. This Chocolate Chip Cookie Dough Cheesecake is no exception. 

About a year in a half ago, my brother and his wife introduced us to The Cheesecake Factory. I had heard good things about it, but the closest one to us is in Salt Lake City, two hours away from where we live, so we had never made a special trip to eat there. While we were visiting them, they invited us to come along with them to try it out. 

It was fantastic.

The food was really good and we had some delicious entree’s there, but the cheesecake. It was a cheesecake lover’s dream! They have so many different flavors. We decided even though The Cheesecake Factory is a ways away from where we live, it is worth the occasional trek to enjoy this tasty restaurant. 

For our fifth anniversary, about a month ago, we were in Salt Lake for the weekend. Needless to say, we made it to The Cheesecake Factory. Twice. Our second visit was just for some more cheesecake though 🙂 

 

Chocolate Chip Cookie Dough Cheesecake from Butter, Love, and Cowboys

After that weekend trip where we indulged in The Cheesecake Factory’s cheesecake twice, I continued to crave cheesecake. So while we were still on our cheesecake high, I decided to make this bad boy. It totally fulfilled that craving. My sister and her family were visiting us for the weekend so she directed me to this delicious recipe. 

First we have a simple graham cracker crust. You can use an Oreo crust if you like, but I really liked this cheesecake with a graham cracker bottom. We fill that crust with a classic cheesecake filling. Next we enrich the filling with a batch of chocolate chip cookie dough. To top it off, we add a smooth covering of chocolate ganache.

I simply adore a layer of ganache on a cheesecake.

Chocolate Chip Cookie Dough Cheeecake
An indulgent and satisfying cheesecake, stuffed with cookie dough and topped with a chocolate ganache.

For the crust
  1. 9 whole graham crackers, crushed
  2. 1/3 cup butter, melted
  3. 3 tablespoons sugar
For the cheesecake filling
  1. 3 (8 oz) packages cream cheese
  2. 1 1/2 cups sugar
  3. 1 cup sour cream
  4. 1/2 teaspoon vanilla
  5. 3 eggs, lightly beaten
For the cookie dough
  1. 1/3 cup butter
  2. 1/3 cup sugar
  3. 1/3 cup brown sugar
  4. 1 tablespoon water
  5. 1 teaspoon vanilla
  6. 1/2-2/3 cup flour
  7. 1 1/2 cup milk chocolate chips, divided
For the ganache
  1. 1 cup chocolate chips (we prefer 3/4 milk, 1/4 dark).
  2. 1/4-1/3 cup cream
For the crust
  1. 1. Preheat oven at 350 F. Grease a 9-inch spring form pan. Combine crushed graham crackers, melted butter, and three tablespoons sugar. Mix until combined and press into pan. Bake for ten minutes.
For the cheesecake filling
  1. 1. Beat cream cheese and sugar until smooth. Add sour cream and vanilla. Mix well. Add the eggs and beat on low until just combined. Pour over graham cracker crust.
For the cookie dough
  1. 1. Cream butter and sugars. Add water, then vanilla, and combine. Add flour. If it is too wet after adding 1/2 cup of flour, add up to 2/3 cup. It will be fairly sticky. Fold in 1 cup chocolate chips.
  2. 2. Drop by teaspoon-fulls over cheesecake filling. Gently push the dough beneath the surface of the cheesecake filling.
  3. 3. Sprinkle remaining 1/2 cup of chocolate chips on top of the cheesecake and gently press them in.
  4. 4. Place spring form pan on a cookie sheet and bake at 350 for 45-55 minutes or until a toothpick inserted comes out clean. Cool completely.
For the ganache
  1. Pour chocolate chips into a heatproof bowl. Heat cream in the microwave until hot. I start out with 1/4 cup cream, but if it is too thick will add up to 1/3 cup of cream until I reach the consistency I want. Pour cream over chocolate chips and whisk until smooth. May need to place it in the microwave for thirty more seconds. Spread over cooled cheesecake. Refrigerate until ganache is set and serve! Cover and refrigerate leftovers.

Caramel Sauce

Last weekend, we made the trek up to Montana for Easter. My mom made Pioneer Woman’s Caramel Apple Pie for Easter dessert. Now let me tell you, I am NOT a pie fan. Call me crazy but I do not believe pie crust belongs in any dessert. Pie crust is wonderful with chicken pot pie or other dinner food, but I detest it with anything sweet. That pie though. I still swoon when I think about it. The best part, aside from the buttery crumb topping, was definitely the caramel sauce. It left such an impression on me, I just HAD to whip up a double batch this weekend.

This Caramel Sauce has been making me so happy that I have been thinking of ways to put it on almost every treat I have been consuming. A drizzle here, a drizzle there. Who am I kidding? I don’t just drizzle, I drench. Honestly though, I think my favorite way to eat it is warmed up and straight from the jar. Last night I finally had a bite of ice cream with a spoonful of caramel sauce. It was fantastic as well. Thank you Pioneer Woman. Thank you.

This recipe is super easy too. When it comes to dessert sauces, I typically prefer they are a thick-ish consistency. The original recipe was more runny so I boiled it in an attempt to reach my desired consistency. It worked great- not so think you have to slab it on, but thick enough it sticks and oozes all over whatever dessert you choose to put it on.

A buttery and flavorful Caramel Sauce. It will be your new go-to dessert topping!

Ingredients
  1. 2 cups brown sugar
  2. 1/2 cup salted butter
  3. 1 cup cream
  4. 2 teaspoons vanilla
Instructions
  1. Place all ingredients in a medium sized saucepan. Melt together over medium-low heat. Whisk to combine well. Bring to a rapid boil. Boil 5-7 minutes. Once it cools off a few minutes, if it still is not as thick as you would like, boil 2-3 minutes longer or until desired consistency is reached. Store in the refrigerator. Serve warm over ice cream or any other sweet thing you would like!

These brownies. Where do I begin? Breakup Brownies are an outrageous mixture of two of my most favorite things in this world- chocolate and peanut butter. Wait, wait, wait! Breakup Brownies have FOUR of my most favorite things in this world- chocolate, peanut butter, Oreo’s, and Reese’s. You will literally want to eat these ’til the cows come home!

These bad boys have become one of my most loved brownie recipes. On top of that, they are pretty simple. In between layers, there is some required cooling, but like I said, they are simple. 

There are various recipes for these bars and a lot of recipes entitle them “Crack Brownies”. I’ve got no beef with that name, but I have my reasons for liking the other. Some may scoff that when I married My Cowboy, I literally married one of the first guys I met when I went off to college, but I never had the heartbreak of a bad breakup. Score! Seriously though, I think if I were going through a breakup, my recovery would call for these. Therefore, I still dub them, “Breakup Brownies”.

We begin with a boxed brownie mix. Sure you can be fancy and use the real thing, your own homemade recipe. However, if you add a few simple ingredients to a brownie mix you can end up with something practically like the real, homemade deal. 

Next, we add a full covering of Reese’s and Oreo’s.

To top it off, we melt milk chocolate chips and peanut butter, mixed with Rice Krispy’s and Oreo’s for a generous layer of deliciousness.

Another note is that I have made these in both a 8×8 inch pan and a 9×13 inch pan. If you use the former, be ready for a SUPER thick brownie, like the ones in these photos. If you use the latter, they are a pretty standard brownie size.  I don’t know that I liked either way better so I guess it would just depend how many people I was trying to stretch the brownies for.

For the Brownies
  1. -1 box brownie mix
  2. -1/4 cup milk
  3. -2 eggs
  4. -1/2 cup butter, melted
For the second layer
  1. -12 Reese's peanut butter cups, cut into quarters.
  2. -10 Oreo's, in chunks
For the topping
  1. -2 cups milk chocolate chips
  2. -1 cup peanut butter
  3. -1 tablespoon butter
  4. -1 teaspoon vanilla
  5. -1 cup Rice Krispie's Cereal
  6. -3/4 cup Oreo's, in small chunks
For the brownies
  1. *1. Preheat oven at 325 F. Grease an 8x8 inch pan. Combine the brownie mix, milk, eggs, and butter. Pour into greased pan. Bake for 50-52 minutes.
For the second layer
  1. 2. When you pull the brownies out of the oven, immediately place the Reese's peanut butter cups and the 10 chunked up Oreo's on top of the brownies. After 3-5 minutes, spread the melted Reese's and Oreo's with a knife. Let brownies cool completely.
For the topping
  1. 1. Place chocolate chips, peanut butter, and butter in a microwave safe bowl. Melt in the microwave using increments of thirty seconds. Stir between each thirty seconds. Continue until melted and smooth. Add vanilla and combine.
  2. **2.Add Rice Krispie's and Oreo's to the chocolate chip and peanut butter mixture.
  3. 3. Spread topping over cooled brownies and let set up completely. Serve and enjoy!
Notes
  1. *You can make this same recipe in either a 9x13 inch or 8x8 inch pan. The 8x8 inch pan will yield a very thick brownie like in these photos. Just make sure you adjust the baking temperature and time in correlation with the size of pan you use, according to the instructions on whichever brownie mix you have.
  2. **You can skip the 3/4 cup of Oreo's and just use 1 3/4 cup of Rice Krispies instead. Using the Oreo's makes for a pretty rich brownie but they are so good!
