Reese’s Stuffed Cookie Pie

Where do I begin with Cookie Pie?! This is another one of those cornerstone recipes in my arsenal! It starts with homemade chocolate chip cookie dough. Next it’s layered with a mother-load of Reese’s, and is finished with more cookie dough on top. It is then baked to perfection with golden edges, and a slightly underdone gooey center. Top it with ice cream and my homemade Hot Fudge Sauce for one of the best sweet craving fillers on planet earth.

Reese’s Stuffed Cookie Pie is basically a Skookie for a crowd.  It’s a lot easier than throwing five or six small skillets in the oven, but is the same idea. When it’s just My Cowboy and I around, or only a couple of extra’s, I generally use our five inch cast iron skillets for my Chocolate Chip Skookie. If we are feeding a number of people though, I have found it is easier and just as yummy to bake it in a pie plate, large skillet, or a cake pan.

Another thing I love about Cookie Pie is that it is so versatile! You can use any type of cookie base you want or mix it up with a brownie base. I have done all of the above and many versions in between. I will share some of those other versions with time, but no matter what variation of this recipe I try, we have decided we still love Reese’s Stuffed Cookie Pie the best. There is something about a butter-y chocolate chip cookie plum full of Reese’s that just makes My Cowboy and I both swoon.

Reese's Stuffed Cookie Pie
Serves 8
Reese's Stuffed Cookie Pie is a giant, chocolate chip cookie, loaded with Reese's, and designed to feed a crowd. Top with ice cream and hot fudge for dessert perfection!

Ingredients
  1. -3/4 cup butter, soft
  2. -1/2 cup sugar
  3. -1/2 cup brown sugar
  4. -1 teaspoon vanilla
  5. -1 egg
  6. -1/2 teaspoon baking soda
  7. -2-21/2 cups flour
  8. -1/8 teaspoon salt
  9. -2 cups milk chocolate chips
  10. -12 snack size Reese's
Instructions
  1. Preheat oven @ 325 degrees F. Cream the butter and sugars at least 2-3 minutes until smooth and creamy. Add vanilla and mix. Add egg and mix.
  2. In a separate medium sized bowl, mix baking soda, 2 cups flour, and salt. Gradually mix into the wet ingredients. Add remaining 1/2 cup flour if necessary. Dough shouldn't be sticky. Fold in milk chocolate chips.
  3. Grease a 8-9 inch cake pan, cast iron skillet, or pie plate. I prefer to use the 8 inch cake pan, because the pie plate doesn't cook it quite as "deep dish" style. I like how cast iron bakes, but will choose the cake pan over it for this recipe as well, because it takes up less storage space to store it in the cake pan.
  4. Press half of the cookie dough into the baking medium of choice. Unwrap the Reese's and place an even covering on top of the cookie dough. Scatter the remaining cookie dough over the Reese's by tablespoons. Bake 20-25 minutes, or until the edges begin to turn golden. You can try testing the center as well to ensure it is done. I always bake it so it is just a touch underdone. I like it just underdone enough it is gooey.
  5. Let cool about ten minutes. Top with ice cream and hot fudge. We also like to top it with caramel or melted peanut butter! Enjoy! I usually cover the cake pan with foil and squeeze it in a gallon Ziploc bag for storage.

Crowd-size Cheesecake

Crowd-size Cheesecake starts with a crust of your choice- Golden Oreo, graham cracker, or a cake bottom. Topping the crust is a no-bake cheesecake layer, and to finish it off pile on your favorite pie filling! Crowd-size Cheesecake is thus named, because it is a great way to feed dessert to a crowd.

The cake crust is what is written in the original recipe, but when I made this about a month ago, I was in a hurry and quickly threw together a Golden Oreo Crust. It was delish! My filling of choice was cherry pie filling. You can use any pie filling. I hands down prefer to make my own pie filling, but there is something about canned cherry pie filling from the store that makes my world go ’round. Plus it makes topping this dessert an easy step.

I love this treat and it is a recipe that was a part of my childhood. This Crowd-size Cheesecake recipe originally comes from a close family friend. There are many recipes from her that are some of my favorites, and that is especially meaningful to me because she passed away a few years ago.

One reason I am so passionate about baking and cooking is because of the experience. I love food. I always have and I always will. Enjoying good food was a huge part of life in the household I grew up in. My Mom is one of the best cooks/bakers around and largely because of that, food is a big deal to me. 

Eating food isn’t just eating, it is an experience. For example, when I ate this for the first time in many years about a month ago, it made me nostalgic. It reminded me of my childhood and our family friend who is no longer with us. At times, making her recipes, helps me feel connected to her. I love that I can experience sweet things like that through baking and food.

Crowd-size Cheesecake
Serves 32

*Crust
  1. 20 graham crackers, crushed +1 cup butter, melted
  2. OR
  3. 2 15 oz package Golden Oreo's, crushed + 1 cup butter, melted
  4. OR
  5. 1 box white or yellow cake mix and ingredients on the package
No-Bake Cheesecake Filling
  1. 2 8 oz packages cream cheese, soft
  2. 2 8 oz tubs Cool Whip
  3. 3 cups powdered sugar
Topping
  1. 2-3 21 oz cans pie filling, flavor of your choice. (I prefer cherry on this recipe)
Instructions
  1. 1. If making the graham cracker crust, combine the graham crackers and melted butter. Press into a large, greased cookie sheet and bake at 325 degrees F for 8 minutes. Cool completely.
  2. If making the Golden Oreo Crust, combine Oreo's and melted butter. Press into a large cookie sheet. Set aside.
  3. If making the cake crust, preheat oven @ 350 degrees F. Prepare cake batter according to instructions on the package and bake in a large, greased cookie sheet for15-20 minutes. Cool completely.
  4. 2. For the no-bake cheesecake filling, beat the cream cheese until smooth. Add the powdered sugar and mix until well combined. Fold in the Cool Whip. Spread over the crust of choice.
  5. 3. Spread pie filling of choice evenly over the top of the no-bake cheesecake layer. Refrigerate at least 2-3 hours or overnight.
Notes
  1. *You can use any of these three options for the crust bottom.
  2. This recipe is also easily halved for a 9x13 pan.

Raspberry Truffle Brownies

Raspberry Truffle Brownies begin with a fudge-y brownie bottom and are followed by a chocolate raspberry filling. These are then topped off with additional chocolate, of course!  What I really love about these Raspberry Truffle Brownies are the fact that they are heavy on the chocolate with just the perfect touch of raspberry flavor in the filling.

I first came across this recipe once upon a summer when I was in high school. My Mom often subscribed to Taste of Home and as I flipped through the pages, I stumbled upon these Raspberry Truffle Brownies. Summer and raspberries just go together so they immediately called to me. I made them a couple times and loved them, but completely forgot about them for many years until a month or two ago. I became reacquainted with the recipe online and knew I had to share them with you!

Raspberry Truffle Brownies
Serves 9

For the Brownie
  1. 1/2 cup butter, melted
  2. 1 cup sugar
  3. 2 eggs
  4. 1/2 teaspoon vanilla
  5. 1/2 cup flour
  6. 1/4 cup + 2 tablespoons cocoa powder
  7. 1/4 teaspoon baking powder
  8. 1/8 teaspoon salt
  9. 1/2 cup milk chocolate chips
For the Raspberry Truffle Filling
  1. 1 cup semi-sweet chocolate chips
  2. 1 teaspoon shortening
  3. 8 oz cream cheese, softened
  4. 1/2 cup powdered sugar
  5. 1/3 cup raspberry jam
For the Topping
  1. 1/4 cup milk chocolate chips
  2. 1 teaspoon shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Combine melted butter, sugar, and eggs in a large mixing bowl. Add vanilla and mix. In a separate bowl, combine flour, cocoa powder, baking powder, and salt. Slowly add mixture to wet ingredients. Do not over mix. Incorporate milk chocolate chips. Pour batter in a greased 8 or 9 inch pan and bake 28-33 minutes. Remove from oven and let cool completely.
  2. 2. To prepare the filling, combine the chocolate chips and shortening in a microwave safe bowl and place in the microwave. Reduce the power level to sixty percent and melt in increments of 30 seconds. Stir between each interval. Set aside to cool. In the bowl of a stand mixer, place softened cream cheese and powdered sugar. Add jam and mix well. Add melted chocolate and mix well. Spread over cooled brownies.
  3. 3. To prepare the topping, melt chocolate chips and shortening in the microwave, using the same process as before. Place chips and shortening in a microwave safe bowl, reduce microwave power level to sixty percent, and stir every thirty seconds. Drizzle on top of the raspberry filling and chill in the fridge. Keep leftovers refrigerated.

No-Bake Nutella Cups

No-Bake Nutella Cups are the perfect cool treat for a hot summer day. They start off with a chunky Oreo crust and are topped with the most delectable, creamy Nutella filling. This treat is also quick and easy!

I began sharing the desserts I concocted for My Cowboy’s brother’s wedding when I posted these No-Bake Reese’s Cups a few weeks ago, and promised I would be back with the other recipes I used. I knew I wanted a chocolate-y flavor for their reception and thought it would be super easy to come up with something I liked. After all, I’d made many a no-bake chocolate cheesecake. It will be a cinch, right?

This recipe gave me the most trouble. It took me at least three or four tries before I came up with these beautiful and oh so chocolate-y No-Bake Nutella Cups. I was not intending for this recipe to include Nutella. Originally, I was thinking plain chocolate cheesecake flavor with caramel and brownie bites. I whipped up several different renditions with this idea and they were good, but they just weren’t great. I don’t know what it was, but I didn’t love the combination of no-bake chocolate cheesecake and brownie. Nor did I love the combination of no-bake chocolate cheesecake and caramel. 

I thought the caramel, brownie, and chocolate cheesecake combo sounded so good as I rummaged through Pinterest for ideas. But, the combination just didn’t cut it. At this point, I had pretty well given up on creating a chocolate concoction I was satisfied with and decided the chocolate and peanut butter cups would suffice for anybody’s chocolate craving at the wedding.

Just as I was about to give up, I decided to give it one more try. I continually asked My Cowboy’s for ideas concerning my chocolate cheesecake failures, but we didn’t come to any conclusion, and finally it just hit me. If I couldn’t get plain old chocolate to work out, try Nutella! Immediately, I began my absolute final try for a chocolate flavor and it turned out wonderfully well. It was one of my favorites. No-Bake Nutella Cups saved the day!

No-Bake Nutella Cups
Serves 8
No-Bake Nutella Cups start out with a chunky Oreo crust and are topped with the most delectable and creamy Nutella filling.

Ingredients
  1. 16-20 Oreo's
  2. 8 oz cream cheese
  3. 1 cup Nutella
  4. 2 tablespoons cocoa powder
  5. 1 1/2 cups powdered sugar
  6. 8 oz Cool Whip
  7. whipped cream, optional
Instructions
  1. Break the Oreo's in larger chunks, but not too big. Save some Oreo crumbs to place on top of each cup. Place Oreo's in the bottom of 8 5 oz cups. You can use larger cups if you choose, there just won't be as many cups! Fill each cup about an inch high with Oreo's.
  2. For the Nutella filling, cream the cream cheese and Nutella. Add the cocoa powder and combine. Add the powdered sugar and combine. Fold in the Cool Whip. Refrigerate filling 2-3 hours. Place filling in each cup and top with remaining Oreo crumbs.
  3. Another option is to refrigerate after dividing the filling into cups as it would take a little less time to chill.
  4. You can also top each cup with whipped cream as I did in the photos. We decided, however we liked these cups better without the extra cream on top.

A Cowboy Wedding Tradition

As I mentioned in my most recent post, My Cowboy’s brother and his bride tied the knot this month. He is the youngest cowboy in the family and the final brother to take the plunge. For the rest of us ladies, this means our bride tribe is complete. No more being outnumbered by boys in this family. 

It was a beautiful day and we couldn’t be happier for the newest couple in our family. It is so refreshing to witness two people so in love start their life together as husband and wife. Now that all the cowboys have claimed their brides, I can share something I’ve been wanting to share for a while without spoiling any surprises for future sisters.

I am all about traditions. I love them. They can be especially meaningful and unifying when shared in our families. Plus they can be super fun. I love fun. This tradition just might be one of the most fun wedding traditions I have ever encountered. The nature of this tradition totally suits these cowboys too. What’s more western than a kidnapping? In our family, each bride has been kidnapped and held for ransom on their wedding day.

Oh and no worries, because we always wait to kidnap until after the ceremony has been performed. Kidnapping the bride before then would just be mean. The kidnapping generally takes place during the luncheon, after the bride and groom have finished their meal. In our case, it happened while we were thanking our guests for coming.

Wait, what? Where are you taking me?

So what happens after the bride has been taken hostage by the cowboys? The boys leave a ransom note which is read aloud to the luncheon guests. In that ransom note, they generally require the groom to beg, plead, sing, or all of the above, for the money to get his bride back. The boys then head towards the nearest store with the bride (Wal-Mart preferred). Soon after, the sisters-in-law bring the groom once he has gathered the ransom money required. Here is an example of a ransom note, from another brother’s wedding a few years ago.

My Cowboy was required to procure a wheel barrow to push me around the store. Unfortunately/fortunately, the grocery store we shopped at didn’t have any wheel barrows! So he had to visit the neighboring store and barter with them to borrow their wheel barrow. To prove he wouldn’t steal it and would return it when he was done, he had to give up his car keys :D.

Once the mode of transportation for the groom to push his bride is procured, they are given a shopping list. This is where the money the groom gathered comes in. The groom then wheels his bride around the store (preferably wedding dress clad) as they search for each item on the list. You know, items needed for a wedding night. If the money they gathered isn’t enough, then they beg some more, this time to complete strangers in the store.

Honestly, one of the best parts of this whole ordeal are the looks strangers give the bride and groom. Some offer congratulations, some look confused, some appear annoyed, and some are pleased. One lady even commented, rather unkindly on the bride’s wedding dress. Fortunately however, most onlookers are plain amused! It all adds to the enjoyment we take in this tradition.

What made our most recent kidnapping even better was when we discovered the grocery store didn’t have pregnancy tests out on the shelves. The groom had to push his bride in her shopping cart up to the pharmacy and ask for one. Other wedding night valuables were also nowhere to be found on the shelves. Where would they be? Behind the counter, with the cigarettes. Red-faced, the groom wheeled his bride up to that counter and inquired after the items needed. Fortunately, the youngest cowboy in the family was the best sport. He was definitely the most willing of all the brothers to do everything we asked. 

This tradition really is so fun. I find it one of the best parts of the wedding day!

No-Bake Reese’s Cups start with Oreo chunks piled beneath a rich and creamy peanut butter layer. To finish off, extra pieces of Reese’s and chocolate top this decadent dessert. As always, no-bake anything is what keeps me sane in my hot kitchen this time of year!

Last week, the youngest cowboy in My Cowboy’s family got hitched! His pretty little lady asked me to do the desserts for the reception. Happily, I accepted! I brooded for months about what to make. This Cowboy and his bride are both local, so I knew it would be a well-attended reception and it sure was. Therefore, whatever I decided on, I wanted it to be good! I tested, created, improved, and recreated recipes for months. 

My Cowboy quickly became a beneficiary of the project.

As time went on, I caught wind of how many people they were planning on for the reception, and knowing it was a summer wedding, I decided no-bake treats for the win. As I pinterest-ed  (ya, it’s totally a thing) wedding dessert ideas, I saw many cute pins with no-bake cups. No-bake, single serve, and cute- perfect for a wedding! 

Before my list of flavors even began, I knew without a doubt, Reese’s Cups would have it’s place at this celebration. Reese’s and peanut butter just aren’t even a question with me. I also knew I wanted varied flavors, with the hopes that everybody could find a flavor they like and have a perfectly, happily satisfied sweet tooth. 

My test kitchen eventually produced what I shall call the final four. The other three recipes will be coming at you soon. Unsurprisingly, Reese’s Cups proved My Cowboy’s and I’s favorite!

The evening of the reception, as we packed and carried the hundreds of dessert cups, my little heart felt so satisfied. You know the feeling of taking pride in your work? I’m not talking about about an excessive ego that feels YOU are the only one who can do things and do them right, but that feeling of knowing your hard labors produced results you are pleased with. Over the months of testing, I became very proud of all the recipes I produced and to see them all done, to know they were tasty, and know the were enjoyed at the wedding made my night.

Serves 8

Ingredients

  2. 8 oz cream cheese
  3. 1 cup peanut butter
  4. 1 1/2 cups powdered sugar
  5. 8 oz Cool Whip
  6. 6 Reese's, chopped
  7. Chocolate Syrup, for drizzling
Instructions
  1. Place chunked Oreo's in the bottom of 8 5 oz cups. I probably filled them about an inch high with the Oreo's. I used 5 oz plastic cups, but you can use whatever you have on hand. I thought 5 oz was a good single serving size. Just remember if you use larger cups, there won't be as many servings.
  2. Beat cream cheese and peanut butter until smooth and completely combined. Add powdered sugar and combine. Fold in the Cool Whip. *Refrigerate the peanut butter filling for 2-3 hours. Once chilled, Place the peanut butter mixture on top of the Oreo chunks. Leave a little space at the top of the cup, because they are easier to eat that way.
  3. Top with Reese's chunks and drizzle with chocolate syrup. Keep refrigerated. Enjoy!
Notes
  1. *You can also wait to refrigerate the filing until after it is placed in the cups. It will take less time to chill, but I prefer to do it the other way around, because the longer the filling sits on the Oreo's, the more likely the Oreo's are to become soggy, but they are usually fine for about a day. So I generally only make up as many as we will eat that day. Keep the filling in the fridge if you choose to do it this way and just pull it out whenever you are ready to make more cups!

Reese’s Cheesecake Bars

Reese’s Cheesecake Bars are a delectable dessert that begin with an Oreo crust. The filling is a Reese’s loaded, peanut butter cheesecake. These beauties are then topped off with a fudge-y ganache. 

I simply adore a chocolate and peanut butter loaded cheesecake dessert. So does My Cowboy. And that fact sure helps us get along swell. If we’re being honest, a cold piece cheesecake on a warm day is bound to help any marriage succeed.

Think about it. Aren’t you just in a better mood when you eat cheesecake? I sure am!

Significantly so. And My Cowboy is too. So I guess that’s it- after all these years we’ve figured it out. The secret to a successful and happy marriage is cheesecake. In particular these Reese’s Cheesecake Bars. I speak from personal experience when I suggest/prescribe these for marital bliss. This is huge. 

Speaking of huge, these Reese’s Cheesecake Bars are just how I like them-piled high. Of course, cheesecake is a rich dessert, so a smaller piece goes a long way. Unless you’re me or My Cowboy, then it doesn’t. 

Something I find humorous is when a recipe for an 8×8 inch or 9×9 inch square pan claims to yield 16-20 bars. What the hay?! Those are the yields of a 9×13 inch pan. At least my eight and nine inch pans don’t make that many bars. Just Today I looked over a brownie recipe for a 9×9 inch pan that claimed to yield 2 1/2 dozen bars. So that tallies up to 30 bars from a little square pan of brownies, maybe if we serve half bite bars…maybe?

Reese's Cheesecake Bars
Serves 12
Reese's Cheesecake Bars are a delectable dessert that begin with an Oreo crust. The filling is a Reese's loaded, peanut butter cheesecake. Lastly, these beauties are topped off with a fudge-y ganache.

For the Crust
  1. 15 Oreo cookies, finely crushed
  2. 1/4 cup butter, melted
For the Cheesecake Filling
  1. 12 oz cream cheese, soft
  2. 3/4 cup sugar
  3. 1/2 cup peanut butter
  4. 1/2 cup sour cream
  5. 8 Reese's, chopped
  6. 2 eggs
  7. 1/2 teaspoon vanilla
For the Ganache
  1. 1 cup milk chocolate chips
  2. 2 tablespoons peanut butter
  3. 2/3 cup cream
Instructions
  1. 1. Preheat oven at 325 degrees F. Combine the Oreo crumbs and melted butter in a small bowl. Press into a greased 8x8 inch or 9x9 inch pan. Press into the pan with the bottom of a cup. Bake six minutes then remove from oven and let cool until filling is made.
  2. 2. For the filling, combine the cream cheese and sugar. Do not overmix. Add the peanut butter, sour cream, eggs, and vanilla. Mix until just combined. Fold in the Reese's chunks. Bake at 325 degrees F for about 45 minutes. I would check it at about 40 minutes to ensure it is not becoming over done. The middle will still jiggle a little, but the sides will be set. Once baked, cool in the fridge while you make the ganache.
  3. 3. To make the ganache, bring cream to a boil in the microwave. Place chocolate chips and peanut butter in a medium sized bowl. Pour the cream over top and mix until combined and all the chocolate is melted. Pour on top of the bars and spread. Refrigerate at least 4-6 hours. Enjoy!

Kittens for Cache

Our outdoor brood expanded by two a few weeks ago. It may seem a little unorthodox, but we brought home two little kittens for our dog, Cache. Remember Cache? It’s been over a year since I shared his puppy photos. You can read about him here. He is your typical crazy hyper border collie, but we love him. And fortunately he is finally overcoming his fear of cows!

So let my tell you all about why we decided Cache needed a kitten. Last fourth of July, we were enjoying the parade in town with my sister and her family. As we were sitting, a black kitten came wandering down the sidewalk. He was cute, but completely malnourished! He was a rack of bones and looked a bit rough. My sister’s kids played with him and wanted to take him home to our house, since it was obvious nobody was feeding or caring for him.

Enter Salem.

I really don’t care much for cats. I love kittens, but cats are cats. They really can be such selfish, disloyal creatures, but Salem was different. I imagine it was partially the fact that we saved his life as we nourished him back to health. I think he knew and appreciated it. He really was such a sweet kitty! Salem loved to be held and snuggled, he didn’t paw or scratch. And the best part about this whole ordeal was he and Cache became the best of pals. They loved each other. A lot. Cache would lick Salem’s face until it was sopping wet and Salem loved it. We would often find them curled up together on Cache’s doggy bed outside. 

Cache started spending way less time with the other dogs around the ranch and hung out up at our house much more. It was so funny to see these two unlikeliest of pals, but pals the became and pals they remained until one day, Salem was nowhere to be found :(. We looked and looked, but he remains unaccounted for to this day. Cache lost his best friend and I’m convinced we lost the nicest cat in the world.

Fast forward to this spring, when we decided it was time to find another pal for Cache.  My sister and her kids had been staying with us and she found a listing for kittens nearby so we went and checked them out. Enter Salem (the second) and Merlin. I never had any intention whatsoever of bringing home two kittens, bur when I saw them I just couldn’t help myself. Another full black kitten, just like our first Salem was what I wanted. So we pulled out a black kitten and then I caught sight of the most adorable black and white splotched kittens I had ever seen. I told my sister I just had to have one of them too.

Really, who could say no to that face?

Ya, not me. My Cowboy pretended he didn’t approve when I came home with two kittens, instead of one, but he is totally full of it. Who did he smuggle in the house for company while he watched a nighttime movie while I was out of town a couple weeks ago? You know, the kittens. Salem is the black kitten. Merlin is the black and white kitten. And yes, this picture is totally characteristic of Salem. He is kinda feisty! Merlin is more laid back and content to snuggle. He purrs super loudly and begins to do so instantly upon being picked up or petted.

Since my sister and her kids were around a few weeks, these kittens received plenty of love and snuggles as they adjusted to their new home. Kittens were a big part of our childhood. When you live in the country, it isn’t uncommon for cats to hole up somewhere remote on your property and favor you with a litter of kittens. This happened at our place a lot. We didn’t keep many of them, but we often had kittens to snuggle and hold so it was something we often did together as sisters! You know, while the brothers made evil, snarky comments about drowning them or some other nonsense to make this baby girl of the family fear for the kitties lives.

Boys are so mean! Not this boy though, he loves the kittens.

So this picture is totally almost the exact same as a few others but I had to share it because, doesn’t Merlin’s face look evil? That was how he looked when I first saw him too. I thought he looked evil and the previous owner called him Cruella de Vil. Looks can be deceiving though, because he is pretty sweet and most definitely the nicest of the two!

I may not like cats much when they grow up, but they kill mice and mice are my enemy, so I am happy to have one or two around. Now I think I’ll go find my kittens and snuggle.

Serves 9
No-Bake Cookie Dough Bars are a rich treat that will heavily satisfy any sweet tooth. A simple cookie dough filling is topped with a chocolate and peanut butter mixture that will make you want to sing.

Cookie Dough Filling
  1. 1/2 cup butter
  2. 3/4 cup brown sugar
  3. 1/2 teaspoon vanilla
  4. 2 cups flour
  5. 14 oz sweetened condensed milk
  6. 2 cups milk chocolate chips
Topping
  1. 1 cup peanut butter
  2. 3/4 cup milk chocolate chips
Instructions
  1. 1. Grease a 9x9 inch pan. To prepare the cookie dough filling, cream the butter and brown sugar until light and fluffy. Add vanilla and mix. Alternately add the flour and sweetened condensed milk. Fold in the chocolate chips.
  2. 2. For the topping, micowave the peanut butter and chocolate chips in increments of 30 seconds at a power level of 60 percent, until melted. Stir in between each thirty second increment. Spread the topping on top of the bars. Chill bars for about one hour or until the topping is firm. You can pop them in the freezer to chill more quickly. These bars keep best covered and refrigerated. Enjoy!

Samoa cookies are my favorite Girl Scout treat. I really like some of the others too, but Samoa’s have just always done the trick for me. Something I love about these Samoa Bars are they are substantially cheaper to make at home. A batch of Samoa Bars also goes much farther than a box of the cookies!

As is the story with many of my recipes, my older sissie Jessie introduced me to these bars. They have always been more of a spring/summer treat to me because the first time she made them for my family in Montana, she made them for the fourth of July. Therefore a warm weather treat they were and a warm weather treat they still are to me. I don’t know why I feel that way, but I just do, so there. Make them anytime of year though ;).

Shortbread Crust
  1. 3/4 cup butter, soft
  2. 1/2 cup brown sugar
  3. 1/2 teaspoon vanilla
  4. 1 egg
  5. 2 cups flour
  6. 1/4 teaspoon salt
Topping
  1. 3 cups shredded coconut
  2. 1 11 oz bag caramels
  3. 3 tablespoons milk
  4. 12 oz milk chocolate chips
  5. 1-2 tablespoons shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Make the shortbread crust by creaming the butter and sugar. Add the vanilla and egg, then mix well. Gradually mix in the flour and the salt. Press crust into a greased 9x13 inch pan. Bake 20-25 minutes or until the edges are lightly browned and crust has set. Remove from oven and cool completely.
  2. 2. To make the topping, spread the coconut on a cookie sheet. Place in the oven bake at 350 degrees F for 10-15 minutes. Stir the coconut every five minutes until it is golden and toasted. Watch it carefully or the coconut could burn.
  3. 3. Place the caramels in a microwave safe bowl with the milk. Microwave on high in 1 minute intervals, stirring each time until caramels are completely melted. Combine the melted caramel and coconut. Spread the topping on the shortbread crust.
  4. 4. After the topping has cooled, cut into about 16-20 bars, depending how big you would like them. Melt the chocolate chips, with the shortening, in the microwave or on the stove. I usually do it in the microwave, at 60 percent, in 30 second intervals, stirring in between each interval, until the chocolate has melted. Dip the bottom of each bar into the chocolate and place the dipped bars upside down until chocolate hardens. Once the chocolate has hardened, flip the bars over and drizzle with more milk chocolate on top. Let chocolate set and store bars in an airtight container. Enjoy!
