So let’s turn back to New Year’s Eve and New Year’s Day of this year. My parents were visiting and I really already planned my menu, but was still a bit on the fence about dessert. I knew I wanted dessert to be more of a finger food or something dip-able to go along with the rest of our New Year’s Eve fare, which consisted of appetizers and more appetizers.

For some reason, starting the day before New Year’s Eve, I got this serious and strong craving for banana bread. Now, I have always thought banana bread was a delectable little treat, but I have to tell you, it is not something I generally crave. In all honestly, I am pretty sure up until that day, I had never actually made it myself (gasp).

Sure I’ve had it when other people had made it and thoroughly enjoyed it, but like I said, it is not a dessert I normally crave. So back to the day before New Year’s Eve when I was wildly and madly craving banana bread. I decided I just had to make some. Unfortunately, banana bread just always tastes better the next day. Honestly, I really prefer it about three days after it’s been made. As strong as my craving for Chocolate Chip Banana Bread was, I knew in order to enjoy it to it’s full potential, I needed to wait to serve it until the next day.

I decided Chocolate Chip Banana Bread would grace our New Year’s Eve festivities. I felt like it would fit in with the other food, because it’s basically finger food. At least I’ve never seen anybody eat banana bread with a fork, have you?

Back to this mad and wild craving I was having. I don’t know why it came on so strong, but it hasn’t left since. In fact, I made Chocolate Chip Banana Bread again this past weekend. The only things I generally crave as strongly as I was craving banana bread are pizza, a cheeseburger, and tikka masala with naan bread. Oh and Cafe Rio! Those are pretty much my most favorite-est foods of all time.

Let’s also talk chocolate chips. I am a firm believer that nuts don’t belong in my banana bread, or my cookies, or my brownies, or my cake, but I love them plain or dipped in chocolate! I also don’t really believe in banana bread without chocolate chips. They just go together so good I can’t imagine them separating.

Chocolate Chip Banana Bread

This Chocolate Chip Banana Bread is a sweet combination of chocolate and bananas. It is moist, flavorful, and loaded with chocolate.

 

Ingredients:

4 bananas, mashed

1/2 cup vegetable oil

1/2 cup brown sugar

1/2 cup sugar

1/2 cup buttermilk

2 eggs

1 1/2 teaspoons vanilla

2 cups flour

1 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups milk chocolate chips, divided

 

Directions:

Preheat oven at 350 degrees F. Combine the bananas, oil, and sugars. Add the buttermilk and eggs and mix. Add the vanilla and mix. In a separate bowl, combine flour, baking soda, and salt. Gradually add to wet ingredients. Do not over-mix. Add one cup of the chocolate chips to the batter. Pour into a greased standard 9×5 loaf pan. Top with the remaining 1/2 cup of chocolate chips. Bake 50-60 minutes. Do not let the edges turn too brown or it won’t be as moist!

Double Chocolate Peanut Butter Chip Cookies are a heavenly chocolate based cookie filled with loads of peanut butter chips. Their goodness doesn’t stop there. The peanut butter chips are paired with their perfect compliment, milk chocolate. 

Happy New Year! This is my first official post of 2019 (I totally typed 2018, but quickly corrected it). January has brought snow and ice to our neck of the woods and I love it! What else would we want January to be filled with? Sunday was literally the perfect winter day. Well, almost perfect. My Cowboy had to leave after church to catch his flight for a work trip so I was a little lonely :(. Besides him being gone, however, it was perfect. Let me tell you why.

We had a rockin’ snow storm that settled in the night before and continued a good chunk of the day. I find Sunday is my preferred day for a good snowstorm, because after attending church we generally spend the rest of the day at home and often have nowhere we need to go or be. Thanks to the weekly blessing of a day of rest, we don’t generally have to worry about travelling on bad roads on Sunday. It’s the best day to cozy up with a cup of hot chocolate and some cookies! And Chocolate Peanut Butter Chip Cookies will warm you right up. 

Hot cookies are one of my favorite desserts for chilly weather. They are quick and easy, and if you use the right cookie recipe, very satisfying. Chocolate Peanut Butter Chip Cookies do just that, they satisfy. Once again, I am pulling a cookie recipe from my sister, Jessie’s arsenal. She is the cookie queen of the world. Double Chocolate Peanut Butter Chip Cookies

Chocolate Peanut Butter Chip Cookies are a chocolate based cookie, loaded with peanut butter chips, and perfectly complimented with milk chocolate.

1 1/2 cups butter, softened

1 cup brown sugar

1 cup sugar

2 tsp vanilla

2 eggs

3/4 cup unsweetened cocoa powder

3- 3 1/2 cups flour

1 tsp baking soda

1/4 tsp. salt.

2 cups peanut butter chips

1-2 cups milk chocolate chips

  1. Preheat oven at 325 degrees F. Cream the butter and sugars until light and fluffy, about 2-3 minutes. Add vanilla and beat about one more minute. Add eggs and mix well.
  2. In a separate bowl, combine cocoa powder, flour, baking soda, and salt. Start with 3 cups of flour in the mixture, you can later add more flour as needed. Add half of the flour mixture to the butter/sugar mixture and combine. Add the second half of the flour mixture and mix well. If needed, add more flour, until the dough is no longer sticky. It shouldn’t take anymore than an extra 1/2 cup.
  3. Finally, add the peanut butter and chocolate chips. Combine well. Roll the dough into 1 1/2-2 inch balls (I prefer bigger cookies). Place on a greased cookie sheet and bake 10-15 minutes or until they are about cooked through.
  4. Remove cookies from the oven and let them cool on the cookie sheet for five minutes. This will allow the cookies not only to cool off, but to continue baking a little bit more. Store cookies in an airtight container. I like to place them in a container while they are still a little warm, because that extra moisture helps them remain soft through the days. If you are worried about cookies hardening, sticking a slice of bread in with the cookies will help them stay soft as well. Enjoy!

One of the best confectionery parts of the Christmas season is homemade candy. Making it, giving it, and receiving it, I love it all! Each December I only wish there were more time to test out recipes, but I try out as many as I can with the time I am allotted.

Oreo Crack Squares were one of the treats I was able to test out this year. They just may be a new favorite! You can never go wrong with chocolate and peanut butter, but add white chocolate and Oreo’s to the mix and you have yourself candy perfection.

Christmas is well on it’s way! Every December, I find myself wondering where the month has gone. I am definitely thinking the same thing today. Time is something that can be difficult to find this time of year. There is always a Christmas party, shopping, family gathering or other commitments that tend to load up the month. 

I love all of these festivities special to this time of year, but also believe we can easily spread ourselves so thin we forget to enjoy the season and reflect on it’s true significance and meaning. With that in mind, as I search for recipe ideas, I usually revert to the ones that are simple and take the least amount of time. Oreo Crack Squares are just that. They are easy as can be and ready in a time crunch.

Last Friday, as I prepared some Christmas goodies, including these bad boys, I teetered back and forth on which candy to make. Oreo Crack Squares won out, because I thought they would be delicious and especially because I knew they would be quick to whip up!

Ingredients
  1. 2 cups milk chocolate chips
  2. 1 cup dark chocolate chips
  3. 2 cups white chocolate chips
  4. 1 cup peanut butter
  5. 24 Oreo's, coarsely chunked
Instructions
  1. 1. Line a 9x13 inch pan with parchment paper. Place milk chocolate chips, dark chocolate chips, white chocolate chips, and peanut butter in a large microwave safe bowl. Microwave in increments of 60 seconds on a power level of 50-60% until fully melted. Stir in between each increment.
  2. 2. Coarsely crush the Oreo's. Place them in a gallon Ziploc bag and crush them with a rolling pin. Do not crush too much, the larger chunks add a lot of texture to the squares. Reserve about 1/3 cup of crushed Oreo's for the topping, particularly the finer bits.
  3. 3. Stir Oreo chunks into the chocolate/peanut butter mixture. Pour into the parchment lined pan and refrigerate until firm. To hasten this process, place in the freezer for about thirty minutes. Cut into small squares. Enjoy!

Amish Sugar Cookies

Amish Sugar Cookies are the perfect cookie for any Christmas platter! They are soft, chewy, buttery, and so flavorful, the ultimate melt-in-your-mouth kind of cookie. 

If you have read my blog for any length of time, you probably know I love frosting. Before I first tried Amish Sugar Cookies, I just didn’t understand how any sugar cookie could be complete without frosting, but these are.

Just to ensure they really were fantastic enough on their own, I have experimented. I have tried them with buttercream frosting and have made them dipped in milk chocolate. While my favorite of the two was probably the chocolate coating, I learned I just like them best on their own, with a few Christmas sprinkles of course! Most recipes instruct to treat them as a drop cookie. I have issues with the way drop cookies look, so I still roll them into balls. I think it’s prettier that way, but do whatever suits your fancy!

Aside from how positively delicious they are, Amish Sugar Cookies are close to my heart because of how I learned about them. One of our close family friends brought them over to my older sister Elly after she had had a baby. My sister raved about them to me, telling me all about how buttery and melt-y they were. She also told me they were so good they don’t need frosting. 

Sugar cookies without frosting? How scandalous! Elly collected the recipe from our friend and has continued to make them ever since. She brought a batch to my house the following year during the Christmas break and I was hooked. Anytime either of us make these cookies, we think of that close friend, who has since passed away. It’s sweet to have those reminders of loved ones who have passed, especially during the holidays.

Amish Sugar Cookies
Amish Sugar Cookies are the perfect cookie for any Christmas platter! They are soft, chewy, buttery, and so flavorful, the ultimate melt-in-your-mouth kind of cookie.

Ingredients
  1. 1 cup butter, soft
  2. 1 cup vegetable oil
  3. 1 cup granulated sugar
  4. 1 cup powdered sugar
  5. 2 eggs
  6. 1 teaspoon vanilla
  7. 4 1/2 cups flour
  8. 1 teaspoon cream of tartar
  9. 1 teaspoon baking soda
  10. Christmas colored sprinkles, optional
Instructions
  1. Preheat oven at 325 degrees F. Cream the butter, oil, and sugars. Add eggs and mix. Add vanilla and mix. In a large separate bowl, combine flour, cream of tartar, and baking soda. Gradually combine with the wet ingredients. Roll dough into 1-1 1/2 inch balls. Place sprinkles (if using) in a small bowl. Dip the top of each cookie ball in the sprinkles and place cookie on a greased cookie sheet. Bake 10-12 minutes or until cooked through. Don't let them turn brown! Let cool about five minutes and place in an airtight container.
Notes
  1. I have had these cookies go hard the next day, so I usually put them in an airtight container while they are still warm and place a piece of bread in with them for extra moisture to avoid this problem.

The Hunt

So there are a lot of hunts this time of year. The hunt I am thinking of is one of my favorites though. It is not just any hunt it is the hunt. This hunt happens at various times throughout November and December for different families, but for us, the hunt happens as soon as possible after the Thanksgiving holiday. I usually count it as part of our Thanksgiving celebration really.

Have you guessed what the hunt is that I’m referring to yet? Tromping through the snow, trees, mountains, forest? It’s that time of year for the Christmas tree hunt! We spent Thanksgiving at the ranch this year with My Cowboy’s family so four out of the five couples, including us, went to search out our Christmas trees from a canyon nearby.

One of the best parts of Christmas and other holidays to me is tradition. Traditions bring us together in a special way, especially families. I am grateful for the traditions my family had growing up and for the sweet memories I can look back on from those times. I am also grateful for the traditions My Cowboy and I have and the ways they bond us. My grandpa passed away earlier this month so I have been feeling especially nostalgic. Reminiscing on traditions from my childhood and those that we have formed or carried on into my adulthood, has been a way to keep loved ones close, including those who have passed on.

I have officially finished decking our halls now that the Christmas tree is up. Merry Christmas season to all of you! I feel so blessed each year as we celebrate the Savior’s coming into the world and marvel at His selfless life and sacrifice on behalf of each of us. I sincerely hope your Christmas is merry and that the true Reason we celebrate this season brings peace to your neighborhoods, homes, and families.

Chewy Pumpkin Chocolate Chip Cookies

Chewy Pumpkin Chocolate Chip Cookies are bomb! These are a soft, chewy cookie with fall spices and just enough pumpkin flavor to give you all the fall feels. Hot cookies are one of my favorite additions to a chilly fall night.

Chewy Pumpkin Chocolate Chip Cookies start out with my favorite chocolate chip cookie recipe. My goal was to form my own cookie that was just like a chocolate chip cookie, but with pumpkin flavor and spices. I enjoy cake-y pumpkin cookies, but I enjoy chewy chocolate chip cookies even more, so I wanted to combine the two!

Ingredients
  1. 1 1/2 cups butter, soft (Use real butter, no substitutions!)
  2. 1 cup granulated sugar
  3. 1 cup brown sugar
  4. 1/2 cup pumpkin puree
  5. 2 teaspoons vanilla (Mexican vanilla is best!)
  6. 2 eggs
  7. 4-5 cups flour (start with 4, add more if needed)
  8. 1 teaspoon cinnamon
  9. 1/4 teaspoon nutmeg
  10. 1/2 teaspoon pumpkin pie spice
  11. 1 teaspoon baking soda
  12. 1 teaspoon salt
  13. 3 cups milk chocolate chips
  14. 1 cup semi-sweet chocolate chips
Instructions
  1. 1. Preheat oven at 325 degrees F. Cream the butter and sugars until light and fluffy, about 2-3 minutes. Add pumpkin puree and mix. Add vanilla and beat about one more minute. Add eggs and mix well.
  2. 2. In a separate bowl, combine flour, cinnamon, nutmeg, pumpkin pie spice, baking soda, and salt. Start with about four cups of flour in the mixture, you can later add more flour as needed. Add half of the flour mixture to the butter/sugar mixture and combine. Add the second half of the flour mixture and mix well. If needed, add more flour, until the dough is no longer sticky, up to one additional cup (you shouldn't need anymore than five cups total).
  3. 3. Finally, add the chocolate chips and combine well. Roll the dough into 1 1/2-2 inch balls (I prefer bigger cookies). Place on a greased cookie sheet and bake 12-15 minutes or until they are just golden in color (cook time will vary based on how big you roll the cookie dough balls). Do not let them turn brown!
  4. 4. Remove cookies from the oven and let them cool on the cookie sheet for at least five minutes. This will allow the cookies not only to cool off, but to continue baking a little bit more. Store cookies in an airtight container. I like to place them in a container while they are still a little warm, because that extra moisture helps them remain soft through the days. Chocolate Scarecrow Bars

Chocolate Scarecrow Bars are a crunchy treat loaded with the combined flavors of chocolate and peanut butter. These are definitely part of the “just treats, no tricks” category. In my adapted recipe, this original Halloween dessert gets the most delectable makeover I could think of- a chocolate one.

So I saw several recipes for Scarecrow Bars a year or two ago and set my heart on making them and sharing, if appropriate. By the way, “sharing, if appropriate,” is when My Cowboy and I both agree that a recipe is worth sending out on the worldwide web, because we each found it delicious! As I reread this recipe, I realized two things.

  1. Scarecrow Bars begin with a yellow cake mix. (And I immediately thought, “Isn’t there a way we can improve that?”)
  2. Scarecrow Bars crunchy rice crispy topping includes a decent amount of peanut butter, which I naturally translated to a more generous amount of peanut butter. (My mind raced to thoughts of my favorite flavor combination. “If there’s peanut butter, why not let there be chocolate too?!”)

Chocolate Scarecrow Bars were then born. These were a relatively easy treat that totally satisfied My Cowboy and I’s Halloween sugar fix this past weekend. Chocolate, peanut butter, and Halloween. It doesn’t get much better than that.

Serves 16
Chocolate Scarecrow Bars are a crunchy treat mixed with the flavor combination of chocolate and peanut butter. They are like the original, only chocolate!

Ingredients
  1. 1 box devil's food cake mix
  2. 1/2 cup butter, melted
  3. 1 egg
  4. 2 teaspoons vanilla, divided
  5. 3 cups mini marshmallows
  6. 1/2 cup corn syrup
  7. 1/3 cup brown sugar
  8. 1/4 cup sugar
  9. 2/3 cup peanut butter
  10. 2 cups rice crispy cereal
  11. 1 cup almonds OR peanuts (I used slivered almonds)
  12. 1 cup candy corn
Instructions
  1. Preheat oven at 350 degrees F. Combine cake mix, melted butter, egg, and 1 teaspoon of vanilla. Mix well. Press into a greased 9x13 pan and bake 10-12 minutes or until set. Remove pan from the oven and sprinkle marshmallows over top of the cake/brownie layer. Move the oven rack closer to the top of the oven and bake bars an additional 1-2 minutes, until the marshmallows begin to puff up.
  2. As soon as you pull the bars out of the oven, begin working on the top layer. Do not let the marshmallows cool, or the topping will not attach to the bars and when cut, the top layer will come apart from the bottom. Combine corn syrup, brown sugar, sugar, and remaining 1 teaspoon vanilla. Stirring frequently, bring the mixture to a boil over medium heat, then remove from heat. Add peanut butter and mix until fully incorporated. Add rice crispy cereal, nuts, and candy corn. Mix well. Place mixture over top of the marshmallow layer. I found it easiest to drop it on top in tablespoon size heaps and then pressed the mixture together. Cool completely before serving. Enjoy!

Pumpkin Cinnamon Roll Dip is a delectable warm dip full of pumpkin flavor and fall spices. It is swirled with cinnamon roll filling and served with graham crackers or Oreo’s. I also made cinnamon bread sticks to go along with it and that was delicious!

I cannot ever get enough of fall desserts. They are some of my favorite treats of the entire year! All things pumpkin are at the top of that list as well. Pumpkin Cinnamon Roll Dip is such an easy and tasty addition that fits that bill…so well.

Pumpkin and cinnamon roll flavors just go together. Cinnamon rolls are fall in and of themselves, but with pumpkin added, it is even better.

My Cowboy totally took these next two pictures for me. Isn’t he a rock star? He especially is because I am really bossy and sometimes snappy when I need camera help, but he helps me anyway. Bless him. I have discovered through food blogging, that it is really hard to hold a camera to take a picture and use your hand in the photo. My choice is either use My Cowboy for a hand model or have him snap a few shots while I hand model. We did some of both :).

Ingredients
  1. 8 oz cream cheese
  2. 2/3 cup sugar
  3. 1/3 cup pumpkin puree
  4. 1 teaspoon vanilla
  5. 1 1/2 teaspoons cinnamon, divided
  6. 3 tablespoons butter
  7. 1/3 cup brown sugar
  8. 1/8 teaspoon nutmeg
Instructions
  1. 1. Preheat oven at 375 degrees F. Beat the cream cheese and sugar until creamy. Add pumpkin puree and vanilla. Mix until well combined. Add 1/4 teaspoon of the cinnamon. Spread in a greased baking pan. The best thing I had for this amount of dip was a loaf pan so that is what I used. A six-inch cast iron skillet would work or any other similar sized dish.
  2. 2. For the cinnamon roll filling, cream the butter and brown sugar. Add remaining cinnamon and the nutmeg. Placed tablespoon size drops of the mixture evenly over the cream cheese/pumpkin layer. Swirl in the cinnamon roll filling with a butter knife. Bake about 10 minutes or until warm through. Serve warm with graham crackers or Oreo's. I did homemade cinnamon sticks and that was yummy too! We also thought this dip was tasty cooled as well. Refrigerate leftovers.

I know I can’t be alone when it comes to a love of cookie dough. Don’t get me wrong, because I love hot cookies! Regardless of that deep and sincere love I feel, sometimes I encounter this problem. Maybe you have encountered it too? You know the problem where you are so full of cookie dough that by the time the cookies are baked, you aren’t hungry for hot cookies anymore?

I mean, come on, you’ve got this rad cookie dough sitting in front of you and the cookies are in the oven. What’s a girl to do?  It’s just a big, fat dilemma to me sometimes.

Pumpkin Chocolate Chip Cookie Dough will totally eradicate that dilemma for the day, because naturally, you don’t need to worry about the whole baking part. You completely skip that step and just get to eating. Now that is my kind of recipe!

This is it- my first pumpkin recipe of the season. It is an exciting post for me, because I adore all things fall and especially fall dessert! Not to mention all things pumpkin. There are many flavors out there when it comes to edible cookie dough. The most common tends to be chocolate chip. Pumpkin Chocolate Chip Cookie Dough is just like it, but with a touch of pumpkin, not too much, and a couple of common fall spices-cinnamon and nutmeg.

If straight cookie dough is too sweet for you, I highly recommend treating this recipe as a dip for Oreo’s or graham crackers!

Ingredients
  1. 1/2 cup butter, soft
  2. 1 cup brown sugar, packed
  3. 1/2 cup pumpkin puree
  4. 1 teaspoon vanilla
  5. 2 cups flour
  6. 1/2 teaspoon cinnamon
  7. 1/4 teaspoon nutmeg
  8. 3-4 tablespoons milk or cream
  9. 1/2 cup milk chocolate chips
  10. 1/4 cup white chocolate chips
Instructions
  1. Cream the butter and sugar several minutes, until light an fluffy. Add pumpkin and vanilla. Mix well for about one minute. Add about half of the flour and all the cinnamon and nutmeg. Gradually add the rest of the flour. Add milk or cream until desired consistency is reached. I prefer a softer consistency so I added all of the cream. Fold in milk chocolate chips and white chocolate chips. Refrigerate leftovers. Enjoy!

Samoa Brownies begin with my favorite, from scratch, fudge-y brownie. The brownie is followed by the traditional Samoa layers of caramel, toasted coconut, and a milk chocolate drizzle. Brownie, caramel, toasted coconut, and melted chocolate- why wouldn’t they be good?

I love brownies. If you haven’t noticed, I post a lot of brownies in various forms. Girl Scout Samoa cookies are also a love of mine. These two loves of mine combined is a lot of happiness for my taste buds. Plus, let’s take a look at the hard facts. If I could only enjoy Samoa’s when the Girl Scouts are selling cookie boxes, then I wouldn’t be a happy camper, because it’s only a certain portion of the year. Samoa Brownies

For the Brownies
  1. 1 cup butter, melted
  2. 2 cups sugar
  3. 4 eggs
  4. 1 teaspoon vanilla
  5. 1 cup flour
  6. 3/4 cup cocoa powder
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
For the Samoa Filling
  1. 3 1/2 cups shredded coconut
  2. 2 (11 oz) bags Kraft caramels or caramel bits
  3. 1/4 cup milk
Topping
  1. 1/3 cup milk chocolate chips
  2. 2 teaspoons shortening
Instructions
  1. 1. Preheat oven at 350 degrees F. Make the brownies by combining melted butter, sugar, eggs, and vanilla in a large bowl. In a separate bowl combine flour, cocoa powder, baking powder, and salt. Add dry ingredients to wet ingredients. Mix until just incorporated. Do not over-mix! Bake 30-35 minutes. I prefer brownies a touch underdone rather than overdone. Let cool completely.
  2. 2. To prepare the Samoa filling, preheat oven at 375 degrees F. Stir every 3-5 minutes for about 10-15 minutes or until the coconut is browned. Watch closely so it doesn't burn. Remove from the oven and allow to cool while you melt the caramel. Place caramels and milk in a microwave safe bowl. Place in the microwave, stirring every 60 seconds. It takes about 3-4 minutes for the caramels to melt completely. Immediately toss in the toasted coconut. Stir until coconut is completely coated with caramel. Spread over cooled brownies.
  3. 3. Melt chocolate chips in a microwave safe bowl with the shortening. Reduce power to sixty percent. Microwave in 30 second increments until melted. Stir in between each thirty second increment. Drizzle melted chocolate on top of caramel and coconut mixture. Let the Samoa filling and chocolate topping harden. Enjoy!
